2 C. slightly overcooked rice

1/2 C. marinated vegetables (available prepackaged at most Korean markets, called banchan)

2 eggs

gochujang (hot pepper paste), as needed

kimchi, as needed

sesame oil

soy sauce

 

Preheat the waffle iron and brush with sesame oil. Place a handful of rice on the waffle iron, distributed evenly. Sprinkle on some of the marinated vegetables and then cover with another handful of rice, evenly distributed. Cook until crispy. (This will take somewhere around 8 minutes, though your waffling time may vary.) While it’s cooking, place a non-stick pan on high heat, add oil and fry an egg sunny side up until it’s crispy on the bottom and soft on top (about a minute). Season the egg with salt and pepper. Assemble your plate with the crispy waffled rice on bottom, egg on top, a spoonful or more of hot pepper paste (depending on taste) and kimchi. Season with soy to your preference and enjoy.

8 ounces small elbow macaroni (about 2½ C.)
2 C. reduced-fat sharp cheddar cheese
2 tsp. cornstarch
1 C. low-fat milk
1 large egg
½ tsp. garlic salt
½ C. panko breadcrumbs
2 tsp. melted butter

 

Preheat the oven to 400ºF. Place foil or paper liners in a 12-C. muffin tin and spray lightly with non-stick baking spray. Cook the macaroni according to the package directions. Drain and immediately return to the pot. Add the cheese and stir until it is nearly melted. In a medium bowl, whisk together the cornstarch and milk. Add the egg and whisk until smooth. Pour the milk mixture over the macaroni and mix well. In a small bowl combine the butter and the breadcrumbs. Scoop the macaroni mixture evenly into the prepared muffin tins (it will be wet and milky, but don’t worry, it will bake up fine). Sprinkle 2 tsp. crumbs on each and bake for 20 minutes.

8 ounces extra-sharp cheddar cheese, shredded (2 C.)

1 1/2 C. (7 1/2 ounces) all-purpose flour

1 T. cornstarch

1/2 tsp. salt

1/4 tsp. cayenne pepper

1/4 tsp. paprika

8 T. unsalted butter, cut into 8 pieces and chilled

3 T. water

 

Process cheddar, flour, cornstarch, salt, cayenne, and paprika in food processor until combined, about 30 seconds. Scatter butter pieces over top and process until mixture resembles wet sand, about 20 seconds. Add water and process until dough forms ball, about 10 seconds. Transfer dough to counter and divide in half. Roll each half into 10-inch log, wrap in plastic wrap, and refrigerate until firm, at least 1 hour or up to 3 days. (Dough can be frozen for up to 1 month; thaw completely before slicing and baking.) Adjust oven racks to upper-middle and lower-middle positions and heat oven to 350°F. Line 2 rimmed baking sheets with parchment paper. Unwrap logs and slice into ¼-inch-thick coins, giving dough quarter turn after each slice to keep log round. Place coins on prepared sheets, spaced 1/2 inch apart. Bake until light golden around edges, 22 to 28 minutes, switching and rotating sheets halfway through baking. Let coins cool completely on sheets before serving. (Coins can be stored at room temperature for up to 3 days.)

1 (20-oz.) package refrigerated hash brown potatoes

8 oz. black forest ham, diced

1 1/2 C. shredded cheddar cheese

3 large eggs, beaten

2 cloves garlic minced

2 T. chopped fresh parsley leaves

1/2 tsp. dried thyme

1/4 tsp. smoked paprika

Kosher salt and freshly ground black pepper, to taste

Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray. In a large bowl, combine hash brown potatoes, ham, cheese, eggs, garlic, parsley, thyme and paprika; season with salt and pepper, to taste. Pour a scant 1/2 C. of the potato mixture into the waffle iron, close gently and cook until golden brown and crisp, about 4-5 minutes. Serve immediately.

6 C. Cauliflower Florets

¼ C. nonfat Greek Yogurt

2 T. Franks Buffalo Wing Sauce

2 T. Olive Oil Mayo

2/3 C. Panko Breadcrumbs

1/3 dry Breadcrumbs

2 tsp. Canola Oil

¼ tsp. Garlic Salt with Parsley

Preheat the oven to 400°F. Line a baking sheet with foil and set aside. In a large skillet, place the cauliflower and 1 cup of water over medium high heat. Cover and steam for 5 minutes, then transfer the cauliflower onto a paper-towel-lined plate. In a small bowl, whisk together the yogurt, wing sauce, mayonnaise, and 2 tablespoons water. In a separate shallow bowl or pie plate, combine remaining ingredients and toss to mix. Hold a cauliflower floret by the stem, dip and twist the floret top through the Buffalo sauce, lightly wipe off excess sauce, roll into the crumbs, and place on the baking sheet. Repeat with remaining florets. Spray lightly with cooking spray. Bake for 20 minutes, or until golden brown. If you would like your Buffalo Bites crispier or more browned, place them under the broiler for 1 minute before serving.

1/2 C. milk

1 large egg

1 T. extra-virgin olive oil

1 C. seasoned bread crumbs

1/2 tsp. salt

1/2 tsp. garlic powder

1/2 lb. cheese ravioli, chilled

Nonstick cooking spray

1 C. marinara sauce

 

Preheat the waffle iron on medium. Cover a baking sheet with wax or parchment paper and set it aside. Preheat the oven on its lowest setting.  In a small bowl, whisk together the milk, egg, and olive oil. In another small bowl, combine the bread crumbs, salt, and garlic powder.  Dip the ravioli first into the milk mixture, coating both sides, then dip in the bread crumb mixture, pressing the mixture so it sticks. Place the coated ravioli on the prepared baking sheet.  Coat both sides of the waffle iron grid with nonstick spray. Heat the marinara sauce in a small saucepan over medium heat or in the microwave for 1 minute.  Place as many ravioli as will fit in the waffle iron, close the lid, and cook for 2 minutes, or until crispy and toasted.

2 cups sifted all-purpose flour
1 pinch salt
6 ounces shredded Cheddar cheese
1/2 cup butter, melted

Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a large cookie sheet. In a medium bowl, mix together the flour and salt. Stir in the cheddar cheese and melted butter to form a firm dough. Roll pieces of dough into ropes as big around as a penny. Slice into 1/4 inch pieces. You may need to chill the dough until firm for better rolling. Place the slices onto the prepared cookie sheet, 1 inch apart. Bake for 20 to 25 minutes until the bottoms of the coins are lightly toasted and the tops are firm. Allow to cool completely before serving. Store in an airtight container at room temperature.

½ Sandwich Thin, toasted (Ozery Bakery One Bun Multigrain Thin Sandwich Buns)

1/2 tablespoon coconut oil

1 (4 oz) package sliced baby bella mushrooms sliced

1/4 teaspoon salt

1/4 teaspoon pepper

1 clove garlic minced

1/2 – 1 tablespoon champagne vinegar

Fried egg

Crumbled Cheese (queso fresco, cojita, feta, etc), for garnish, optional

Chopped herb(s), for garnish, optional

Melt coconut oil in a large skillet over medium heat. Once melted, add in mushrooms, salt, and pepper. Cook, stirring occasionally for 3 minutes. Add in garlic and vinegar and cook until mushrooms are tender, about 1-3 additional minutes. Pour over toasted bun and top with a fried egg.

Energy-Boosting Breakfast Toast

1 slice whole grain, oat bran, or other hearty bread

Spread of your choice peanut butter, any nut or seed butter, cottage cheese, cream cheese, all-natural jam, smashed avocado, hummus, mascarpone, honey goat cheese

Sliced or diced fruits apple, pear, grapes, banana, peach, apricot, figs, fresh or frozen and defrosted berries, or other favorite fruits

Vegetables/leafy greens cucumbers, tomatoes, peppers, arugula, baby spinach, or other favorites

Favorite toppings chia seeds, hemp seeds, flax or sunflower seeds, pepitas, nuts, coconut, dried fruits, granola, cacao nibs, fig jam, onion jam

Protein Choices:  Scrambled, Fried, Poached or sliced Hard-Boiled Egg, Bacon, Prosciutto, Ham, Cheeses

Seasoning salt, pepper, chiles, herbs, spices, salsa, honey, lemon or lime juice, everything bagel seasoning, grated cheese, hot sauce

Toast bread until lightly brown. Add spread of your choice. Top with a fruit or vegetable, or both, as desired. Scatter on any toppings you like. Finish with appropriate seasonings.  Alternate toasting method:  Preheat your oven to 425 degrees and place a baking sheet in the oven. While you are waiting for the oven to heat, butter one side of your bread with softened butter. When the oven and the baking sheet are heated to temperature, quickly remove the baking sheet from the oven. Quickly place the bread, butter side down, onto the baking sheet and return the sheet to the oven. Bake until the bottom side of the bread is toasted 5-10 minutes (the top won’t toast, so peek under the corner of your toasts to check the bottom regularly). This toast is delicious because it gets crispy on one side without drying out like it does in the toaster.

Hard-Boiled Egg & Herb Toast

 

So fast and easy if you have hard boiled eggs on hand!

1 Egg, hard boiled

1 slice whole wheat bread, toasted

1 tsp. diced herb (try parsley, tarragon, thyme, whatever you have)

EVOO

Salt & Pepper

 

Thinly slice egg, then layer slices over toast. Drizzle with olive oil and season with salt and pepper. Garnish with tarragon.

Pear Chutney Cheese Toast

 

Chutney:

2 pears (see note)

1 tablespoon olive oil

¼ cup diced red onions

2 teaspoons minced ginger

2 tablespoons apple cider vinegar

4 pitted and chopped Medjool dates

¼ teaspoon salt

½ teaspoon cinnamon powder

zest from 1 lemon

¼ cup water

â…› teaspoon red chili flakes (optional)

1 tablespoon butter, softened

2 slices Dave’s Good Seed Bread

3 ounces sliced sharp white cheddar cheese

1/2 cup arugula microgreens

2 teaspoons olive oil

squeeze lemon juice

To make chutney, start by peeling , coring , and chopping the pears into cubes. Heat a pot over medium-low heat and add the diced onions, cooking until fragrant, 5 to 6 minutes. Stir in the ginger and follow with apple cider vinegar. Stir up any stuck onion pieces. Add in the pears, dates, salt, cinnamon powder, zest, water, and chili flakes if using. Continue to cook, stirring occasionally, until the pears softened, and the mixture thickens up, 15 minutes or so. If the chutney is too thick, add a splash or two of water as it cooks. Preheat broiler. Butter each slice of bread and place on a sheet tray. Bake the bread under the broiler, flipping once, until just starting to crisp. Keep an eye on the toast- this will happen quickly. Remove bread from oven and smear on 2-3 tablespoon of chutney and follow with the slices of cheese. Place back under the broiler and cook until cheese is melting and bubbly, 60-90 seconds (again, goes fast- keep an eye on it!) Toss the microgreens with the olive oil and lemon juice, then top toast before serving.

Note: When making chutney I prefer the Bartlett varieties or any other variety that holds shape when cooked.

Break graham cracker in half. Spread yogurt on one half and top with the other. Wrap in plastic wrap and freeze.

1 ½ lb (1 medium) butternut squash
2/3 T. oil – walnut oil would be nice
2 tsp. finely chopped fresh sage leaves (6–7 leaves)
½ tsp. ground black pepper
½ tsp. finely chopped fresh rosemary
½ tsp. kosher salt
¼ tsp. ground white pepper
2 T. finely chopped dried cranberries
1 T. honey
½ tsp. freshly squeezed lemon juice
Coarse salt, such as Celtic or Maldon sea salt
Fresh rosemary for garnish

Preheat your oven to 350°F, with the racks positioned in the upper and lower thirds. Line two baking sheets with parchment paper or silicone baking mats and spray or lightly brush them with some of the oil. To prepare the squash, remove about ½ inch from the top and bottom. Divide it into two sections where the neck meets the seed bulb, then remove the skin with a sturdy vegetable peeler or a paring knife. If you plan to use the seed bulb, scoop out the seeds. Cut each section into even, â…› inch slices, about as thick as two stacked quarters. A Mandoline or food processer would be helpful here. If the flesh around the seed bulb is less than ½ inch thick, save it for another use. In a wide pot or deep skillet, bring about 2 quarts of water to a boil. Place a bowl of ice water near your cooktop. Cook the squash in 2 batches, boiling each for 1½ to 2 minutes. Don’t overcook them or they’ll break apart. Carefully scoop the slices into the ice water. Lay the slices on a kitchen towel and pat them completely dry.
In a mixing bowl combine the sage, black pepper, rosemary, salt, and white pepper. Pour the oil into another bowl for brushing. Combine the cranberries, honey, and lemon juice and set the mixture aside. Arrange the slices in a single layer on the prepared baking sheets so that they’re close but not touching. Brush them generously with the oil, flip and brush the other side, and then sprinkle them with some of the herb mixture. Bake the slices for 15 minutes, flip them and sprinkle them with more of the seasoning, then rotate the baking pans and return them to the oven on opposite racks. Continue cooking the chips until they’re a deep amber-brown and crisp—10 to 15 minutes longer, depending on thickness. Check the chips frequentl – they can burn quickly – and remove the ones that finish early. Note: The chips will get crisper as they cool. To serve, spread the chips on a platter and drizzle them with the cranberry topping, coarse salt, and fresh rosemary.

You can use other winter squash for this recipe – kabocha, delicata, acorn – but I think the butternut squash was custom-designed for chip-making. Its neck section yields perfect rounds, and its sturdy, dense flesh makes it easy to handle. Look for a squash that has a long, straight neck and a small seed bulb on its end.

Fry. Butternut squash chips fry up nicely in a couple of minutes in hot oil! Par-boil and dry the slices as described above, then follow a basic frying technique

1 tomato large

2 T. Parmesan cheese shredded

2 T. Mozzarella cheese or Fresh Mozzarella pearls

4-8 fresh basil leaves

1/2 tsp. coarse sea salt

 

Slice the tomatoes into 1/4″ slices and lay in air fryer basket. Top each slice with one basil leaf and enough cheese to cover the top. Air fry at 350 for 5 minutes, until the cheese is melted and bubbly. Lightly sprinkle with coarse sea salt and serve

2 C. quick cooking oats (or pulse whole oats in a food processor a bit)
1 C. rice crispy cereal
1/4 C. shredded coconut
1/4 C. butter
1/4 C. honey or agave
1/2 C. brown sugar
1/2 tsp. salt
1/2 tsp. vanilla

In a large mixing bowl, mix together the oats, cereal and coconut. Set a small saucepan over medium high heat and melt the butter. Add the honey, brown sugar and salt. Stir together then leave it alone as it comes to a boil. Once the boil has reached all the way around the edges of the pan, begin timing. Allow this mixture to boil for 2 minutes and 15 seconds. During this time, you may need to turn the heat down a bit so it doesn’t overflow, but be sure it keeps boiling. Add the vanilla then pour the mixture over the oats, using a rubber spatula to get all the sugar mixture out of the pan. Mix the ingredients together until the oats are completely coated. Add in your desired mix-in then press very firmly into a lightly greased 9×13″ pan. If you like your bars thicker, you can use a smaller pan or double the recipe and use the same 9×13 pan. If you do not press firmly enough, the bars will fall apart when you eat them. Place them in the fridge for 20 minutes then cut to size.

Chocolate Chip: Add 1/2 C. of mini chocolate chips to the finished mixture before pressing into the pan, allowing it cool just a bit or you will end up with melted chips. Sprinkle on a few extra chips over the top after they are pressed into the pan.

White Chocolate Cranberry: Add 1/3 C. of white chocolate chips and 1/3 C. of Craisins to the finished mixture before pressing into the pan, allowing it to cool just a bit first or you will end up with melted chips.

Candy Bar: Add 1/3 C. of Heath bar pieces, 1/3 C. of mini M&M’s and 1/3 C. of chopped pretzels to the finished mixture before pressing into the pan.

Peanut Butter: Add 2 T. peanut butter to the finished sugar mixture before pouring it over the oats. Once mixed with the oats, add 1/2 C. peanut butter chips before pressing into the pan.

Raisin Nut: Add 1/3 C. of chopped raisins and 1/3 C. of chopped pecans to the finished mixture before pressing into the pan.

½ tsp. lemon zest

Preheat the oven to 350° F and line a baking sheet with a silicone mat or parchment paper. Spread the almonds, oats, pumpkin seeds and flaxseeds on the sheet and bake until fragrant, about 8 minutes. Transfer the mixture to a large bowl. In a small saucepan, bring the sugar, honey, butter and salt to a boil over moderate heat. Simmer until the sugar is dissolved and a light brown caramel forms, about 5 minutes. Remove from the heat and stir in the vanilla and cinnamon. Drizzle the caramel all over the nut-and-oat mixture. Stir in the puffed rice, blueberries and lemon zest until evenly coated. Line an 8-inch square baking dish with parchment paper, extending the paper over the side. Scrape the cereal mixture into the dish and spread into an even layer. Cover the mixture with a second sheet of parchment and press down to compress it. Let stand until firm, about 2 hours. Discard the top piece of parchment. Using the overhanging paper, lift out the cereal square and transfer it to a work surface. Cut into 12 bars and serve. To store, wrap bars individually in plastic wrap and eat within a few days or freeze.

¼ C. reduced-fat blue cheese crumbles
¼ C. fat-free sour cream
2 T. light mayonnaise

Honey mustard dip:
¼ C. honey
2 T. brown mustard
2 T. fat-free evaporated milk
1 T. fresh parsley, rinsed, dried, and chopped (or 1 tsp. dried)
1 T. fresh chives, rinsed, dried, and chopped (or 1 tsp. dried)

Tuscan white bean dip:
1 T. olive oil
1 T. garlic, chopped (about 3 cloves)
2 T. onions, chopped
1 C. low-sodium cannellini beans, rinsed
¼ C. low-sodium chicken broth
1 T. fresh parsley, rinsed, dried, and chopped (or 1 tsp. dried)
1 tsp. fresh oregano, rinsed, dried, and chopped (or ¼ tsp. dried)

Vegetables:
5 C. assorted raw vegetables, rinsed and cut into bite-sized pieces as needed, such as baby carrots, celery sticks, broccoli florets, cauliflower florets, or cherry tomatoes

Combine ingredients for any (or all) of these three dips separately, and set aside (see note below). Arrange vegetables on a platter, and serve with choice of dip.

1/4 C. sugar free pancake syrup
2 T. unsalted butter, cut up in small chunkssyrup
1 T. chili powder
1/2 tsp. salt
1/4 tsp. cinnamon
3 C. air popped popcorn
3 C. mixed nuts, unsalted
1 C. wheat nuts
1/3 C. dried blueberries with no sugar added

Pour the syrup into a medium size saucepan. Place over low heat. Add the butter and let it begin to melt. Sprinkle in the chili powder, salt and cinnamon. Stirring often continue to cook on low until the butter has completely melted. Set the oven temperature to 300 degrees. Toss together the popcorn, mixed nuts, wheat nuts and blueberries in a large baking pan. Pour the syrup mixture over the top and toss to coat all the ingredients completely. Bake 25 minutes or until golden brown. Be sure to stir the snack mix a couple of times during baking to ensure it browns evenly. Cool the snack mix to room temperature before storing in a container.

2 tablespoon water

2 small carrots, peeled and diced

1/2 shallot, peeled and roughly chopped

2- inch knob of ginger, peeled and grated

1/4 cup grape seed oil

2 tablespoons rice wine vinegar

1 tablespoon sesame oil

1 tablespoon sweet white miso paste

1 avocado, fanned

Sesame seeds, for topping

 

To a blender or food processor, add the water, carrots, shallot and ginger. Pulse until carrots and shallot are thoroughly minced. Scrape down the sides and with the blender running, pour in the grape seed oil, rice wine vinegar, sesame oil and sweet white miso paste. Allow the blender to run for 30 seconds or so. Give it a taste and adjust the salt to taste. I added just a pinch of salt. To assemble the snack: half an avocado. Peel the avocado and place flesh side down on a cutting board. Slice it thinly and then gently press on the top, fanning it out. Place a liberal tablespoon of dressing onto the plate. Top with the avocado and then garnish with a few sesame seeds and a pinch of salt.

2/3 C. sugar (white, granulated)

2 tsp. ground cinnamon

9 C. Chex Cereal

1/2 C. salted butter

1 C. packed brown sugar

1/4 C. corn syrup

1/4 tsp. baking soda

 

Preheat oven to 350. Line a large baking sheet with foil or parchment, and spray with nonstick baking spray, or brush/rub with butter. Combine white sugar & cinnamon in a small bowl, and set aside. Pour cereal into a large, heat-safe bowl, and set aside. In a heavy saucepan over medium heat butter, brown sugar, and corn syrup until the mixture comes to a boil, and let boil for one minute, stirring constantly.  Remove from heat, and stir in baking soda. Pour hot butter/sugar/soda mixture over cereal and stir until cereal is coated. Spread cereal on prepared baking sheet & sprinkle evenly with cinnamon/sugar mixture

Place into hot oven and bake for about 5 minutes, then flip and bake for 3 more minutes, until cereal turns golden brown. Remove from oven and let cool completely, then break up and store in an airtight container

Preheat the broiler. Place the mushrooms on a baking sheet, drizzle with the oil, and season with a pinch of salt and plenty of pepper. Broil for 3 minutes. Remove the mushrooms from the broiler, top with the cheese, and sprinkle with the pine nuts. Return to the broiler for 2 minutes more. Remove from the broiler and sprinkle on the chives.

Preheat oven to 450ºF. Spread grapes onto a sheet pan. Drizzle with olive oil. Sprinkle with salt. Lay thyme leaves over top. Toss all together gently with your hands. Place pan in the oven for 7 to 9 minutes or until grapes just begin to burst. I prefer the shorter roasting time — it’s nice when some of the grapes remain intact. Meanwhile, heat a grill or grill pan to medium-high. Brush the bread with olive oil. Grill until nice and toasty. Assemble the open-faced sandwiches: Spread fresh ricotta over bread. Top with roasted grapes. Discard thyme sprigs. (While the thyme sprigs look pretty, it’s a little impractical to serve the sandwiches with the sprigs…they don’t taste so yummy.)

1 pack all butter puff pastry

5 back bacon rashers, sliced into 1 centimeter strips

3/4 tub cream cheese

75 grams cheddar, grated

1 onion, diced

Handful of parsley, chopped

Pre-heat oven to 180C. Line a baking sheet with baking paper. Roll out the puff pastry and spread cream cheese all over the surface. Sprinkle evenly all over with cheddar, onion, bacon rashers, parsley and season with salt and pepper. Then roll up one end until you’ve made a swiss roll. Using a sharp knife, slice up into 1inch segments and place on the baking tray. Brush over with egg wash. Bake for about 20 – 25 minutes until golden.

1 medium cantaloupe, cut into 1-inch cubes

Onto small cocktail skewers, thread prosciutto, mozzarella and melon cubes. Place on a serving platter.  Sprinkle with parsley, if desired. Serve immediately after drizzling with balsamic reduction, if using.

Mix 1 C. Balsamic Vinegar with ½ C. brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved. Bring to a boil, reduce heat to low, and simmer until glaze is reduced by half, about 20 minutes. Glaze should coat the back of a spoon. Let cool and pour into a jar with a lid; store in refrigerator.

8 ounces cream cheese

1/2 C. (or more) caramel sauce (homemade or store-bought)

1/2 C. (or more) toffee bits

sliced apples, pears, pretzels for serving (at least 4-5 apples)

 

Place cream cheese on a serving dish. If you’d like, shape into a round and indent in the center to hold more caramel. Pour as much caramel sauce as you want evenly over cream cheese. Sprinkle with a generous helping of toffee bits. Serve with sliced apples, pears, or pretzels.

2 pears, cored and cut into two dozen slices

1/2 C. goat cheese

Toss sliced pears in orange or lemon juice to keep from browning. Spread goat cheese on the widest part of each slice and top with some cranberries and pistachio pieces. Alternatively, you can mix goat cheese, cranberries and pistachio pieces in a bowl and spread on each pear slice.

2 lb. Ground Beef

½ C. Bacon Cooked and Crumbled

6 oz. Cheddar Cheese Sliced

Preheat your oven to 425 degrees F In a large bowl combine the beef, bacon pieces, pepper, salt, pickle juice, and onion powder. Using your hands, mix the meat with the other ingredients until well incorporated. Spread 1 tbsp of the meat mixture evenly into the cavities of a whoopie pie pan OR if you don’t have a whoopie pie pan, simply spread it into circles approximately 2 inches in diameter on a parchment-lined baking sheet. Bake for 5 minutes, or until meat is cooked through. Carefully remove from the pan and place them a large paper towel lined dish. Top ½ of the meat patties with a 1” square of cheddar cheese, then another patty. Allow them to cool slightly before serving with the dipping sauces of your choice.

A simple mushroom toast with creamy ricotta, crispy caramelized wild mushrooms, brown butter and a splash of sherry vinegar. Top it with fresh parsley and parmesan for an easy appetizer.

4 1-inch thick slices crusty bread

6 T. olive oil, divided

kosher salt

freshly ground black pepper

3 garlic cloves, smashed and peeled

1 lb. mixed wild mushrooms, roughly chopped

1 tsp fresh thyme leaves, divided

2 T. butter, divided

4 tsp sherry vinegar, divided

1 C. ricotta

shaved parmesan, for topping

chopped fresh parsley, for topping

 

Preheat oven to 400°F.  Arrange bread on a parchment lined baking sheet, drizzle with oil and season with salt and black pepper. Toss to coat both sides. Bake until bread is golden on the edges but still springy in the center, about 8 minutes. Halve 1 garlic clove and rub the cut edges on the toasts. Set aside while you prepare the mushrooms. Heat a large skillet over high heat until very hot. Add 2 T. of olive oil and heat until shimmering but not smoking. Add half of the mushrooms and spread into an even layer. Cook without stirring, about 3 minutes, or until bottoms have browned and caramelized.  Season with salt and freshly ground black pepper, toss in one garlic clove and stir. Cook, stirring occasionally, until mushrooms are golden brown and crispy, about 5 minutes.  Reduce heat to medium, add 1 T. of butter and 1/2 tsp. of thyme. Cook and stir mushrooms until butter begins to brown and smell nutty, about 5 minutes. Transfer mushrooms to a large bowl and discard garlic clove. Repeat process with remaining mushrooms, garlic, thyme and butter. To serve, divide ricotta across toasted bread slices and spoon mushrooms over top. Sprinkle a tsp. of sherry vinegar over each toast then top with shaved parmesan and parsley. Enjoy immediately.

25 KRAFT Caramels (1/2 of 14-oz. bag)

1/4 C. milk

2 T.. peanut butter

3 red or green apples, each cut into 8 slices

1/2 C. PLANTERS Dry Roasted Peanuts, chopped

 

Place caramels, milk and peanut butter in microwaveable bowl. Microwave on HIGH 2-1/2 to 3 min. or until caramels are completely melted, stirring after each min. Serve warm as a dip with the apple slices. Sprinkle dipped apples with peanuts.

Heat the oil in a non-stick frying pan over medium heat. Add the seeds and cook, stirring constantly, for about 2-3 minutes, or until the seeds begin to brown. Remove from heat and add the honey and soy sauce to the pan. Return to heat and stir for about 1 minute, until seeds are coated evenly. Spread the seeds on a baking sheet to cool. Store in an airtight container.

Preheat oven to 400.  Place flour, cheese, butter, baking powder, sugar and salt in a mixing bowl and mix together with your fingers.  Gradually add milk to form a ball of dough.  Sprinkle a clean surface with flour and roll the dough around a few times.  Knead by folding, pressing, pushing and turning; repeat about 10 times.  Rough dough into a rectangle about 10 x 7 inches.  Cut the dough lengthwise into strips, each about ½” wide.  Pinch edges and twist each strip into a pretzel shape (try twists or knots instead of just the traditional shape).  Brush with beaten egg, sprinkle with salt, sesame seeds, or grated cheese.  Bake 10-12 minutes, until golden.

1 ounce thinly sliced turkey

Preheat oven to 425 degrees Fahrenheit. Spread tomato sauce over pita bread. Top with sliced turkey, onion, pepper, pineapple. Sprinkle with shredded cheese. Place the pita(s) on a baking sheet and bake in the preheated oven for about 8 minutes, or until the pita bread has reached desired crispness and cheese is melted.

2 ripe Haas avocados
2 limes
1 tsp. sugar
1 tsp. chili powder
1/2 tsp. salt
3 T. extra-virgin olive oil
Chopped chives or cilantro for garnish, optional

Halve avocados and remove pit. Roll limes or heat in microwave for 10 seconds to get juices flowing. Halve the limes. Rub the avocado halves gently with 1/2 lime to retard the browning. Juice limes into small bowl and mix with sugar, chili powder and salt using a fork or small whisk. Add extra-virgin olive oil in a slow stream while mixing dressing. Pour dressing into the cavities of avocados, distributing it equally and serve. Garnish with chives or cilantro as an optional garnish.

Preheat oven to 300°F. Spread popped corn in a large baking pan. Lightly coat with cooking spray. Toss and coat again. Combine cumin, garlic powder, and onion powder. Sprinkle over popcorn. Toss to coat evenly. Drizzle with Worcestershire sauce and Tabasco (if using). Toss again. Bake for 10 minutes, tossing once. Wrap tightly in a pouch made from a double sheet of heavy-duty aluminum foil if not eating immediately.

Nonstick Cooking Spray
1/2 lb. large Mushrooms

Preheat the oven to 250 degrees. Coat a large baking sheet with cooking spray and set aside. Using a sharp knife (a mandolin or v-slicer makes this much easier), slice the mushrooms very thin, then transfer to a baking sheet, arranging the slices in a single layer. Bake uncovered for 2 1/2 – 3 hours or until crisp and completely dry.

I personally use nonstick “release” foil and don’t coat it with cooking spray. Instead I spray it ON the mushrooms once they are lined on the pan and then sprinkle them with a little salt free lemon pepper and some garlic powder.

Notes: Don’t expect to be able to pick these up and eat them like potato chips. Mushrooms have a lot of water and as you cook them it evaporates, and they shrink to 1/3 or even 1/4 of thier starting size. I use these to add a little crunch to a salad instead of croutons or maybe to top a bowl of soup.

1 tablespoon lemon juice or lime juice

½ cup light dairy sour cream

1 clove garlic, minced

4 medium red, yellow, and/or green sweet peppers, seeded and cut into strips

 

In a medium bowl, use a fork to mash avocado with lemon juice. Stir in sour cream, garlic, and salt. If desired, garnish with a lemon wedge. Serve with pepper strips. To make ahead: Prepare as directed. Cover surface of dip with plastic wrap; chill for up to 4 hours.
