1 T. olive oil

1 sliced onion

1 garlic clove, finely minced or 3 whole

2 red bell peppers, seeded and sliced

8 pork chops, trimmed of excess fat

1 14.5 oz. can diced tomatoes

1 T. chopped fresh thyme and rosemary, if desired

Black olives for garnish

Salt and pepper

 

Heat oil in large skillet. Add onion, garlic and pepper and cook over low heat, stirring occasionally, for 5 minutes. Increase the heat to medium, add the chops and cook for 3 minutes on each side or until browned. Add the tomatoes and thyme. Cover and let simmer for 15 minutes or until pork is done. Stir in olives, season with salt and pepper and serve immediately, straight from the skillet. Serve with brown rice and salad.

4 Asparagus Spears, cooked until just tender
4 thin slices cooked Ham
Beaten Egg for coating
Flour for coating
Olive Oil

Put 1 slice of the mild cheese and 1 asparagus spear on each slice of cooked ham and carefully roll each one up to form a cylinder. Dip the ham rolls in the egg and then the flour, then fry them in a little hot oil until they are golden brown. Serve immediately.

Pork Shanks
1/2 pound lard
1 C. all-purpose flour
2 T. kosher salt
2 T. cracked black pepper
1 tsp. smoked paprika
4 pork shanks, 1-1/2 pounds each
1 C. diced onion
1/2 C. diced celery
1/2 C. diced carrots
4 garlic cloves, peeled
1 sprig fresh rosemary
2 sprigs fresh thyme
1/4 C. sherry wine
1/4 C. Marsala wine
2 C. chicken broth
2 C. beef stock
Corn starch slurry, if necessary

Preheat the oven to 350 degrees F. Heat lard in large, heavy casserole dish or Dutch oven over medium-high heat. In large bowl, combine flour, salt, pepper, and paprika; dredge pork shanks, shaking off excess flour. Sear shanks on all sides until evenly browned, about 5 to 7 minutes; remove to platter. Add onions, celery, carrots, garlic, rosemary and thyme to the cooking pot; cook, stirring frequently, until vegetables soften, about 3 to 4 minutes. Add wines; reduce volume by 1/2. Stir in broth and stock; bring to boil and add shanks back to pan. Cover; put in oven; braise until meat is fork-tender and pulling away from bones, about 2 to 2-1/2 hours. Remove shanks and keep warm. Skim excess fat; strain liquid into large mixing bowl, discarding solids. Put strained liquid back into braising pot; bring to simmer over low heat. After cooking dumplings (recipe follows), adjust seasonings. Thicken sauce with cornstarch slurry, if needed.

Mushroom Dumplings

1/4 C. butter
8 ounces assorted mushrooms, diced small
1 C. all-purpose flour
2 tsp. baking powder
1 tsp. sugar
1/2 tsp. salt
1 T. cold butter
1/2 C. milk, approximate
1 T. chopped fresh parsley

Heat butter in saucepan over medium heat; add mushrooms and sauté until fully cooked and dry. Allow to cool while making dumplings. In medium-sized bowl, sift together flour, baking powder, sugar and salt; cut in butter until dough is crumbly; stir in enough milk to form soft dough; blend in cooled mushrooms. Drop by large spoonfuls into boiling reserved braising liquid; cover and simmer 10 minutes (do not lift lid). Place 2 or 3 dumplings in large soup-style serving dish. Lean one pork shank on the dumplings; generously ladle with thickened sauce.

Zucchini, Prosciutto & Mozzarella Rolls

Zucchini, Prosciutto & Mozzarella Rolls

2 medium zucchini
8 ounces prosciutto, thinly sliced
8 ounces fresh mozzarella
3 cups favorite marinara sauce

Preheat oven to 425 degrees. Slice zucchini lengthwise into 1/4 inch long planks. Place in a microwave oven and cook for 2 to 3 minutes, until zucchini is just softened enough to roll into rolls, but not mushy. Place zucchini planks on a flat surface and cover with prosciutto and mozzarella that are cut to fit. Roll up from one short end. Secure with a toothpick. Pour marinara sauce into a 2 quart oven safe dish. Place zucchini rolls in the sauce, swirls facing up. Bake for 60 minutes. (Note: some of cheese will leak out into the sauce, but this is perfectly OK.) Serve immediately.

1 bunch scallions (white and green parts, sliced
1 6oz chunk Black Forest ham, diced (about 1 1/4 cups)
1 clove garlic, chopped
1/2 tsp chili powder
3 large eggs
2 C half-and-half
4oz pepper Jack cheese, diced
1/4 C chopped fresh basil
1 tsp kosher salt
Fresh ground black pepper
1 C packaged cornbread stuffing cubes
Pinch sugar

Preheat oven to 350. Melt the butter in a 10″ cast-iron skillet over medium heat. Add the corn, scallions, ham, garlic, and chili powder. Cook, stirring occasionally until the scallions are soft, about 3 minutes. Meanwhile, lightly beat the eggs in a large bowl and stir in the half-and-half, cheese, basil, salt and pepper to taste. Pull the skillet from the heat. Stir the cornbread stuffing and sugar into the skillet. Pour the egg mixture over and stir gently to distribute all the ingredients evenly. Transfer the skillet to the oven and bake until lightly puffed and golden, about 30 minutes. Serve warm.

Oregon Style Pork Chops with Pinot Noir and Cranberries, Oregon Hash with Wild Mushrooms, Greens, Beets, Hazelnuts and Blue Cheese, Charred Whole Grain Bread with Butter and Chives

4 (1 1/2-inch thick) boneless pork loin chops

Salt and pepper

4 T. extra-virgin olive oil, 3 turns of the pan

2 leeks

1 C. hazelnut or filbert nut pieces

1/2 C. dried sweetened cranberries

1 C. Pinot Noir (recommended: Willamette Valley Oregon)

1 C. chicken stock

1/2 stick butter, divided

2 shallots, thinly sliced

1 lb. crimini (baby portobello) mushrooms, cleaned and sliced

1/2 lb. shiitake mushroom caps, sliced

1 bunch kale, chopped, 4 to 5 C.

1 (15-oz.) can sliced beets, drained

8 oz. blue cheese crumbles (recommended: Oregon)

1 loaf crusty whole-grain bread

3 T. chopped chives

Preheat a large skillet over medium high heat. Season chops with salt and pepper. Add 2 T. extra-virgin olive oil to the hot skillet and the chops. Cook chops 3 to 4 minutes on each side. While they cook, split leeks lengthwise, slice in 1/2-inch half-moon pieces and wash vigorously under running water in a colander to release sand. Shake to dry.  Preheat a second large skillet for your hash over medium-high heat. Add nuts to the skillet and brown 2 to 3 minutes then remove and reserve them.  To chop skillet, add another T. extra and the leeks. Cook the leeks until tender, 5 minutes. Add cranberries and Pinot Noir to the pan. Scrape up the pan drippings and stir in chicken stock. When sauce comes up to a bubble, add the chops back to the pan and reduce heat to simmer. Finish cooking chops through, 10 minutes.  To the hash skillet, add a T. extra-virgin olive oil and 1 T. butter. When butter melts into oil, add shallots then mushrooms and cook 5 minutes, then add kale. Wilt the kale into the pan and season with salt and pepper, to taste. When kale is hot and wilted, add beets and gently combine. Adjust seasonings. Preheat broiler. Pull chops from their sauce. Raise heat and bring back to a bubble. Cut off 4 thick slices of whole-grain bread. Char bread under broiler on each side while you finish the sauce. Add 2 T. butter to the sauce to give it gloss and weight and turn off heat. Pour sauce over the chops. Serve hash alongside the chops and top with crumbles of blue cheese and reserved nuts. Spread charred bread with remaining butter and sprinkle liberally with chopped chives.

2 pork tenderloins, one vacuum package, sliced on a diagonal into 2” pieces

¼ C. sliced shallots

½ C. white wine

1/2 tsp. salt

¼ tsp. black pepper

 

1 T. olive oil

½ small onion chopped

1 can 8 oz. diced tomatoes, drained

2 T. pureed chipotle peppers canned in adobe sauce or to taste

½ a large orange, peeled, seeded and membranes removed and sectioned

 

Place all the ingredients for the meat in a Ziploc bag and marinate for 1-6 hours. I usually turn the bag half through my marinating time. Grill the pork for approximately 3 minutes on each side or until desired doneness. For the Sauce: Sauté onions in olive oil on medium heat until translucent, about 4 to 6 minutes. Add tomatoes, chipotle and orange sections. Simmer for 8 minutes. Let cool slightly. Blend in a blender, food processor or with a wand mixer. Return to pan and simmer for approximately 10 minutes or until thickened ( I sometimes need to do more or less time when simmering, depending on the water content of the oranges.)

Saucy, Italian “Drunken” Noodles with Spicy Italian Sausage, Tomatoes and Caramelized Onions and Red and Yellow Bell Peppers, with Fresh Basil

4 spicy Italian sausage links, casings removed
1 large onion, quartered and sliced thinly
1 ½ teaspoons salt
1 teaspoon Italian seasoning
½ teaspoon cracked black pepper
1 red bell pepper, cored and thinly sliced
1 yellow bell pepper, cored and thinly sliced
1 orange bell pepper, cored and thinly sliced
4 cloves garlic, pressed through garlic press
½ cup white wine (I used Chardonnay)
1 (28 ounce) can diced tomatoes with juice
2 tablespoons flat-leaf parsley, chopped
¼ cup fresh basil leaves, julienned, divided use
8 ounces Pappardelle noodles, uncooked

Place a large, heavy-bottom pan or braising pot over medium-high heat; add about 2 tablespoons of olive oil, and once the oil is hot, crumble the spicy Italian sausage into the pan in small chunks (you want to keep the sausage fairly chunky), allowing it to brown in the oil for a few moments on each side; once the crumbled sausage is browned, remove it from the pan/pot with a slotted spoon and place into a small bowl to hold for a moment; next, add the sliced onion into the pan with the sausage drippings, and allow it to caramelize and become golden for roughly 5 minutes or so, stirring to keep it from burning (add a touch more olive oil, if necessary); once the onion starts to become golden, add the salt, Italian seasoning and cracked black pepper, and stir to combine, then add in the sliced bell peppers, and allow those to sauté with the onion for about 2 minutes until slightly tender and golden; next, add in the garlic, and once it becomes aromatic, add in the white wine and allow it to reduce for a few moments, until almost completely reduced; next, add in the diced tomatoes with their juice, and return the browned spicy Italian sausage back into the pan, and gently fold the mixture to combine; allow it to gently simmer for about 3-4 minutes to blend the flavors, then turn the heat off; to finish the sauce, drizzle in about 2-3 good tablespoons of the olive oil to create a silky, rich flavor, and add in the chopped parsley and about half of the julienned basil; stir, and keep warm while you prepare the noodles. Prepare the pappardelle noodles according to instructions on package; then, drain the noodles very well, and add them directly into the sauce, using tongs to gently toss and combine the pappardelle noodles with the sauce and all of the ingredients in it; check the seasoning to see if you need to add any additional salt or pepper. To serve, add equal portions of the “Drunken” noodles to bowls, and garnish with a sprinkle of the remaining julienned basil; you can even top with shaved Parmesan, if desired, and an extra drizzle of olive oil.

3 lb. pork loin

10 slices bacon

3 C. large seasoned croutons

2 ½ C. diced apple

1 C. reduced sodium chicken stock

1/3 C. chopped parsley

¾ C. chopped roasted chestnuts

6 slices bacon chopped

2 onions diced

1 tsp. minced garlic

1 tsp. dried thyme

¼ tsp. kosher salt

¼ tsp. black pepper

In a medium sized pan on medium level heat, fry 6 slices chopped bacon until crisp. Using a slotted spoon or bamboo strainer remove the bacon and set aside. Add chopped onion, thyme, salt, pepper and garlic to the residual bacon fat. Stir often scraping any bacon residue from the bottom of the pan. Sauté until the onion has softened. Add the diced apples, chestnuts and reduced sodium chicken stock. Bring to a simmer and add the croutons and cooked bacon. Mix thoroughly cover and remove from heat. Butterfly the pork loin using 3 cuts to open like a book. Cover the pork loin with plastic wrap. Lb. the pork with a mallet to make it a uniform thickness. Remove cover from the stuffing and fluff with fork. Add parsley to the stuffing mixture. Spoon the stuffing mixture onto the pork loin leaving a 1 inch frame around all of the edges. Starting at one end – roll the pork and stuffing together to make a tight roll. Wrap pork with the remaining 10 slices of bacon lightly overlapping each layer. Secure with butchers twine. Grill indirect until a digital thermometer reads 155F. Rest for 10 minutes then slice.

3 1/2 cups pineapple juice (reserving 1/4 cup for later)
1 1/2 cups brown sugar
1 (16 oz.) bottle BBQ sauce

Spray the slow cooker with non-stick cooking spray (or use a slow cooker liner to make clean up a breeze!). Take your slab of ribs (make sure that they are defrosted) and cut into individual slabs (about 2-3 ribs each). Throw the ribs into the slow cooker. Mix the pineapple juice and brown sugar together and pour over the ribs. Put the lid back on the slow cooker and cook on HIGH for 7-8 hours or LOW for 10-12 hours. After they are done in the slow cooker, use tongs to gently pull them out (they will literally fall apart when you touch them). Turn the grill on medium heat. While the grill is warming up, mix together the bottle of BBQ sauce and the 1/4 cup of pineapple juice you saved from earlier. Place the ribs gently on the grill and brush with BBQ sauce. Turn the ribs twice, slathering with more sauce each time (you can’t have enough sauce!); they will take about 10-15 minutes to glaze over (as soon as that sauce starts to turn sticky, you know they are done!). Serve immediately and enjoy

4 T. butter, divided

1 medium onion, finely chopped

2 T. flour

1 C. beef stock

1 C. chicken stock

Salt and freshly ground black pepper

1/2 lb. ground beef

1/2 lb. ground pork

1/2 lb. ground veal

1 egg

2 slices white bread, torn, soaked briefly in about 1/4 C. milk and squeezed of excess liquid

1 tsp. allspice

5 gingersnap cookies, ground up in the food processor

2 T. currant, lingonberry or grape jelly

2 T. sour cream

1 lb. egg noodles

1/2 C. Italian parsley (about 2 handfuls), chopped

2 dill pickles, chopped

 

Place a large pot of salted water over high heat and bring it up to a boil. Place a large pan over medium-high heat and melt 2 T. butter. Add the onion to the pan and cook until the onion is tender, 5-6 minutes. Sprinkle the flour over the pan, stirring to incorporate, and cook for about 1 minute. Whisk the chicken and beef stock into the pan and bring the liquid up to a bubble to thicken it slightly — it won’t get too thick, you want a thinner gravy for this dish. Once the liquids come up to a bubble, season with salt and freshly ground black pepper, turn the heat down to low and simmer while you prepare the meatballs. In a medium-size mixing bowl, combine the ground meats, egg, milk-soaked bread and allspice. Season with salt and freshly ground black pepper, and mix everything up with your hands to evenly combine. Using a spoon, small ice cream scoop or your hands, portion the meat mixture into walnut-sized balls. As you shape them, drop the meatballs into the pan of simmering gravy. Once all of them are in the pan, increase the heat to medium and simmer the meatballs in the gravy, stirring occasionally, until cooked through, about 10 minutes. When the meatballs are cooked through, drop the egg noodles into the boiling water and cook to al dente according to package directions. Stir the ground-up ginger snaps into the gravy with the meatballs, and cook to thicken up, about 1 minute. Stir the 2 T. of the jelly and the sour cream into the gravy and keep warm over low heat until the noodles are done. Once the noodles are finished cooking, drain them and return them to the pot they were cooked in. Add the remaining two T. butter and parsley to the pot and stir to melt the butter and evenly coat the noodles. To serve, spoon some noodles into a serving dish and top them off with a scoop of meatballs and gravy. Sprinkle a handful of chopped pickles over the top and serve with your favorite salad alongside.

one 2-pound pork loin

3 teaspoons of vegetable oil

1 teaspoon of Old World Seasoning from Penzey’s Spices (substitute with Paprika and Garlic Powder)

3/4 cups of mushrooms, cleaned and sliced

1/3 cups of shallots, chopped

3/4 cups of cider

1/2 cup of heavy cream

 

Preheat the oven to 350 degrees Fahrenheit. In a large roasting pan that is flame-proof (ie: not a Pyrex glass dish), place the pork loin. Rub it with vegetable oil and dust it thoroughly with the spice mix. Cook at 350 degrees until a thermometer reaches an internal temperature of 145 degrees Fahrenheit, about 65 – 75 minutes for a 2.25 pound roast. Remove the roast from the pan and let it rest for 10 minutes before slicing and serving. Meanwhile, make the sauce. Add the shallots to the pan and cook for 3 minutes until softened. Add the cider and the mushrooms for another 5 minutes, scraping the browned bits up and adding it to the sauce. Finish with the heavy cream and bring to a simmer for another 1-2 minutes. Serve immediately.

4 boneless pork loin chops (each about 7 ounces and 1 inch thick)

Kosher salt and freshly ground black pepper

2 tablespoons olive oil

1 cup apple cider or apple juice

1 tablespoon Dijon mustard

2 tablespoons unsalted butter, cut into 2 pieces

 

Vegetables and Apples

1 pound red-skinned sweet potatoes (yams), peeled and cut lengthwise in half, then cut crosswise into 2-inch pieces

2 Pink Lady or Fuji apples, cored and cut lengthwise into eighths

1 large fennel bulb, trimmed and cut lengthwise into eighths

2 sprigs of fresh rosemary, cut into 1-inch pieces

2 tablespoons olive oil

Kosher salt and freshly ground black pepper

 

Remove the pork from the refrigerator and let stand at room temperature while the oven preheats. Preheat the oven to 450°F. Place a large rimmed baking sheet in the oven and heat until very hot.  To cook the vegetables and apples: In a large bowl, toss the sweet potatoes, apples, fennel, and rosemary with the olive oil to coat. Season with salt and pepper. Carefully remove the baking sheet from the oven and spread the vegetables and apples on it. Roast, turning the ingredients over halfway through, for about 15 minutes, or until the potatoes are nicely browned and tender.  Meanwhile, cook the pork: Season the pork with salt and pepper. Heat a large heavy skillet over medium-high heat. Add the olive oil, then add the chops to the skillet and cook for about 5 minutes per side, or until golden brown and barely pink when pierced in the center with the tip of a small sharp knife. Transfer to a platter (reserving the oil in the skillet) and let stand for 5 minutes.  Pour off all but 1 teaspoon of the oil from the skillet, leaving the brown bits in the pan. Return the pan to medium-low heat, add the apple cider, and bring to a simmer, scraping up the brown bits with a wooden spoon. Whisk in the mustard and simmer for about 2 minutes to reduce the liquid slightly. Remove from the heat and whisk in the butter to lightly thicken the sauce. Season to taste with salt and pepper.  Divide the sweet potato mixture among four dinner plates. Place a pork chop alongside the vegetables on each plate. Drizzle with the pan sauce and serve.

 

 

 

Bacon & Cider Pork Tenderloin

1 pork tenderloin (1.5-2 pounds)

Salt & Pepper

1 T. Olive Oil

8 Strips thin-sliced bacon

1/4 C. Shallots, Minced

1/2 C. Apple Cider or juice

2 T. unsalted cold butter slice

 

Trim tenderloin of fat and silver skin and cut into streaks (about 1 1/2 ” thick) Season with Salt and pepper. Wrap each steak with a strip of bacon and secure with a toothpick. Heat oil in a large ovenproof sauté pan over medium-high and sauté pork until browned, 5 minutes per side. Tip the steaks on their edges to brown the bacon, rolling them as they brown, about 3 minutes total. Cover and finish cooking to an internal temperature of 145 degrees, about 5 minutes. Remove pork and keep warm, pour off all but 1 T drippings. Sauté shallots 2 minutes in same pan, stirring constantly. Deglaze with cider, scraping up browned bits; simmer 2 minutes, then add butter, swirling until melted. Return pork to pan along with any accumulated juices. Season sauce with salt and pepper to taste. Remover toothpicks before serving.

1/4 C. water

1/4 C. dry sherry

3 T. honey

2 T. soy sauce

1 1/2 T. grated fresh ginger

2 tsp. cornstarch

2 (12-oz.) pork tenderloins, trimmed

Pepper

1 T. vegetable oil

1 T. sesame seeds, toasted

 

Whisk water, sherry, honey, soy sauce, ginger, and cornstarch in bowl. Pat pork dry with paper towels and season with pepper. Heat oil in 12-inch nonstick skillet over medium-high heat until just smoking. Cook tenderloins until well browned and meat registers 145°F, about 4 minutes per side (16 minutes total). Transfer pork to carving board, tent loosely with aluminum foil, and let rest for 5 minutes. Whisk sauce to recombine and add to now-empty skillet. Simmer over medium heat until thickened, about 5 minutes. Add pork and any accumulated juices and cook, turning occasionally, until glazed, about 1 minute. Slice and sprinkle with sesame seeds. Serve with any extra sauce.

2 Whole Chicken breasts/ 4 boneless pork chops/ Equivalent of lean Beef tips
1 package of taco seasoning
A touch of oil
1 cup salsa
1 cup apricot preserves
Maybe some brown sugar

Cube the meat into bite sized pieces. Cover with the packet of taco seasoning. Add oil to pan, brown meat until almost done. In a separate bowl, mix together salsa and preserves, add to meat in pan. Simmer 10-15 minutes, taste to see if you need to add some brown sugar.

4 cloves garlic, crushed

1 bay leaf, fresh or dried

1/4 lb. pancetta, thick-cut, chopped into small bits

1/2 lb. bulk hot Italian sausage

1 lb. combined ground beef, pork and veal

1 medium carrot, peeled and finely chopped

1 rib celery, chopped

1 medium onion, chopped

1 C. good quality dry red wine

1 C. prepared beef stock, packaged in a box container or canned

2 cans chunky style crushed tomatoes (32 oz. each)

A handful of flat leaf parsley leaves, chopped

1/4 tsp. allspice or cinnamon (a couple of pinches)

Heat a deep pot over medium-high heat. Add oil, garlic, bay leaf and pancetta bits and brown for one minute. Add meats and brown and crumble them for five minutes. Chop carrot, celery and onions near the stove and add to the pot as you work. Cook vegetables with meat for five minutes and add wine. Cook for one minute; add stock and tomatoes to the pot. Stir in parsley, allspice or cinnamon and season sauce with salt and pepper, to taste. Bring sauce to a boil, reduce heat to medium-low and cook 10-15 minutes minimum before serving. Reheated sauce only improves. Toss pasta (cook only as much pasta as you need at the time: half a lb. for every three people) with a couple of ladles of sauce to coat, then top bowl with extra sauce. Top pasta with lots of cheese and pass bread at the table. The sauce will cover up to two lb. of pasta.

2 eggs, lightly beaten
2 T. plus 1/4 tsp. soy sauce
1 garlic clove, minced
1 T. minced peeled fresh ginger
1 bunch scallions, white and green parts separated and thinly sliced
1/2 pound ground pork
2 carrots, shredded
1/2 C. snow peas, sliced
2 C. cooked brown or white rice (about 3/4 C. uncooked rice)
2 T. rice vinegar

In a wok or large nonstick skillet, heat 1 T. oil over high. Meanwhile, in a small bowl, lightly beat eggs with 1/4 tsp. soy sauce to combine. Add eggs to wok and swirl to coat bottom of pan. Cook, without stirring, until almost set, 1 minute, and then fold in thirds with a spatula. Transfer cooked eggs to a work surface and cut into 1/2-inch pieces. Add 1 T. oil to wok and swirl to coat. Add garlic, ginger, and scallion whites and cook, stirring constantly, until fragrant, 30 seconds. Add pork and cook, breaking up meat with a wooden spoon, until just cooked through, about 3 minutes. Add carrots, snow peas, and rice and stir to combine. Add cooked egg, 2 T. soy sauce, and vinegar and cook, stirring constantly, until rice is coated, about 1 minute. Let cook, undisturbed, until warm, about 1 minute. Top with scallion greens and serve.

1/2 tsp. onion powder

1/2 tsp. garlic powder

1/2 tsp. dried oregano

1 C. apricot preserves

1-1/2 tsp. lemon juice

1-1/2 tsp. lime juice

4 boneless pork loin chops (3/4 inch thick and 4 oz. each)

2 tsp. olive oil

 

Combine the onion powder, garlic powder and oregano; sprinkle over pork chops. In a small saucepan, combine the apricot preserves, lime juice and lemon juice; cook and stir over low heat for 10 minutes or until preserves are melted. Meanwhile, in a large skillet, cook pork in oil over medium-low heat for 8-10 minutes or until lightly browned on one side. Turn chops; generously brush apricot glaze over cooked pork. Cook 8-10 minutes longer or until juices run clear. Serve with remaining glaze. Yield: 4 servings.

12 oz. pork tenderloin

2 tsp. fresh or dried rosemary

2 tsp. olive oil

1 tsp. minced garlic

Pinch of salt

Soak 6 bamboo skewers (6″ long) in cold water for 30 minutes. (If using metal skewers, there’s no need to soak.) 2ut the pork into 1/2″ cubes. Thread the cubes onto the skewers. Transfer to a 12″ x 8″ baking dish. Add the rosemary, oil, garlic, and salt. With clean hands, rub the mixture onto the pork cubes. Cover and refrigerate, turning occasionally, for 30 minutes. Preheat a grill, stove-top griddle, or oven broiler. Grill or broil the skewers, turning occasionally, for about 8 minutes total, or until well browned and no pink remains in the center. Season to taste with pepper. Chicken breast can take the place of pork in these hearty appetizers. If eating as a main dish, double the servings .

2 pork tenderloins (1 package)

1/4 C. soy sauce

1 tsp. minced garlic

1 tsp. Italian seasoning

6 to 8 garlic cloves

1 T. lemon juice

1/4 C. apple juice

2 T. brown sugar

2 T. honey

1 tsp. olive oil

 

Combine all ingredients except pork in a mixing bowl. Marinate the pork in refrigerator for 1 hour. Bake pork in a 300-degree oven until internal temperature reaches 160-degrees. Baste frequently with the marinade.  Slice tenderloins, spoon rice on plate, arrange slices next to the rice, and drizzle with glaze.

1 pound ground pork

2 T. low-sodium soy sauce

Salt and freshly ground black pepper

2 T. thinly sliced scallions, from the white and tender green parts of 4 to 6 scallions

6 medium potatoes (about 2 1/2 to 3-pounds), peeled and placed in a pot of enough water to cover

2 T. butter, plus 2 T., cubed for sauce

1 C. orange juice

1 C. pineapple juice

1 lime, juiced

2 T. green curry paste

2 C. panko bread crumbs seasoned with salt and pepper

2 to 3 liters canola oil, as needed for deep-frying

 

Heat the grapeseed oil in a large skillet over medium-high heat.  When it begins to shimmer, add the ground pork and cook for about 10 minutes until it begins to brown. Using a slotted spatula, temporarily transfer meat to a plate, drain the excess fat from the skillet and return the pork to the pan. Add the soy sauce and cook for 2 or 3 minutes to allow the flavors to integrate, then season to taste with salt and pepper. Stir in scallions, and cook for 2 or 3 more minutes, then remove from heat and let cool to room temperature.  While the meat is browning, boil the potatoes until tender and drain well. Mash the potatoes with butter. (You want these potatoes to be “tight” mashed potatoes, not loose.)  In a medium saucepan, combine orange juice, pineapple juice, lime juice and green curry paste. Allow to reduce by half over medium heat.  Heat the oil in the deep-fryer to 375 degrees F or as directed in the manufacturer’s instructions for similar foods.  Combine the mashed potatoes with the pork mixture and roll into golf-ball sized spheres. Roll in the bread crumbs and add to the deep-fryer basket. Cook until golden brown and drain on paper towels.  Remove sauce reduction from heat and whisk in cubed butter.  Spoon some sauce onto a serving plate and use as a dipping sauce for the korokee.

1 box of manicotti pasta

1 lb ground italian sausage

2 cloves garlic, minced

2 T. olive oil

1 pack fresh basil, rinsed and chopped

1 15oz. container ricotta cheese

2 eggs

Dash of salt

1 jar alfredo sauce (4 cheese is great)

1 jar marinara or other tomato based sauce

Preheat oven to 350 degrees. Cook the manicotti according to package. While manicotti is cooking, heat olive oil in pan and add garlic. Once garlic is slightly golden in color, add sausage and cook thoroughly. Once manicotti is finished, drain and dry. For the manicotti filling, place the ricotta in a large bowl. Add eggs and mix thoroughly. Mix in basil and salt. Once sausage is cooked, mix in with ricotta mixture. Fill manicotti with cheese/sausage mix. Place manicotti in a 9×13 baking pan. Cover manicotti with alfredo sauce and then with a small amount of tomato sauce. Cover with foil and bake for 30 minutes. Uncover and bake for 5 more minutes

4 thin pork chops

1 T. olive oil

1/2 C. cider vinegar

1/2 tsp. ground pepper

1/4 tsp. ground cloves

1 T. tomato paste

3 T. Splenda

2 tsp. grated gingerroot

2 tsp. lemon juice

1/2 tsp. salt

1/4 C. finely diced celery, including leaves

 

Place oil in heavy skillet over medium high heat and heat until searing hot. Place chops in the skillet and brown both sides of the chops, about 4 minutes per side. While chops are browning, combine vinegar, pepper, cloves, tomato paste, Splenda, gingerroot, lemon juice and salt in a blender or processor, cover, and process for 5 seconds to blend. When chops are browned on both sides, pour the sauce over them in the skillet. Scatter the diced celery over the chops, reduce the heat to low, cover partially and simmer for 5 minutes. To serve, transfer pork chops to a serving platter and pour the sauce over the chops, scraping bottom of the skillet for the extra crunchies and sauce. To garnish, arrange parsley or celery leaves on outer rim.

1 package active, dried, yeast

2 tsp. sugar

1 1/2 tsp. salt

3 C. All-purpose flour

1 T. butter

1 C. water, warm

6 slices Bacon, chopped (preferably thick cut)

2 medium onions, sliced

1/4 tsp. Caraway seed

1/2 tsp. salt

Black pepper, freshly ground

1 each Egg

1 each Egg yolk

1C. sour cream

2 T. milk (optional)

Combine the yeast with sugar, salt and 1/2 C. flour in a bowl. Blend in the butter and warm water and mix to combine. Add enough of the remaining flour to make a soft dough (you will need most of it) then turn this onto a lightly-floured work surface and knead for 5 minutes, or until smooth and elastic. Place in a greased bowl, turn to coat then cover and set aside to rise in a warm place for about 30-45 minutes. After this time, pat the dough into a lightly-greased, 12 inch pizza pan or a jelly roll pan. Cover and set aside as you prepare the filling. Place bacon in large, preheated skillet and cook until crisp then remove with a slotted spoon and set aside. Using the remaining bacon fat, saute the onions until tender but not browned. Add the caraway then remove from the pan and sprinkle over the dough. Top with the crispy bacon. Bake at 400°F for about 20 minutes. Meanwhile, mix the egg, the egg yolk and the sour cream together. This will give a custard that you can spoon on top, leaving areas devoid of custard, which is how I like it. If you want something a bit more uniform add the milk to the egg mixture and pour over the onions, spreading it out to cover completely. Sprinkle with freshly ground black pepper. Bake 10-12 minutes longer, or until the top is golden brown and the sour cream mixture has set. Serve warm or room temperature, sliced into wedges.

1 1/4 lb. pork tenderloin, sliced into 1/2-inch thick medallions

1/2 tsp. salt, divided

1/4 tsp. pepper

3 tsp. olive oil, divided

2 T. chopped shallots

3/4 C. low-sodium chicken broth

2 T. balsamic vinegar

1/4 C. dried tart cherries

 

Season the pork medallions with 1/4 tsp. of salt and pepper. Heat 2 tsp. oil in a large nonstick skillet over a medium-high heat and cook the meat until there is just a slight blush in the center about 3 minutes per side. Transfer the meat to a plate and tent with foil. Add the remaining tsp. of oil and the shallots to the pan and sauté until they begin to soften, about 1 minute. Add the chicken broth, balsamic vinegar, the remaining 1/4 tsp. of salt and the cherries and cook until the liquid is reduced by half, about 4 minutes. Season with salt and pepper, to taste. Pour the sauce over the pork medallions and serve.

18 eggs

1/2 C. Flour

2 T. Sugar

1 lb. Cheddar cheese, shredded

1 lb. Cottage cheese — large curd

1/2 C. Butter

1 Onion — minced

12oz. Evaporated milk

10oz. Frozen Spinach — thawed

1 lb. Ham Cubes

1/2 tsp. Celery Seed

1/2 tsp. Dry Mustard

1/2 tsp. Bon appetit seasoning

1/2 tsp. Nutmeg

2 T. Flour

 

Sauté together ham, butter, onion, spinach, spices, and 2 tablespoons of flour; set aside. Whisk eggs, sugar, 1/2 cup of flour, and cheeses. Add ham mixture. Ladle into greased muffin cups. Bake for 30 minutes at 325F. Cool completely. Slide knife around each tart to loosen and remove from pans. Reheat on baking sheet at 325F for about 15 minutes. Makes about 30 tarts.

3/4 C. whole milk

6 T. finely chopped serrano ham

1/3 C. grated plus 1/4 C. Manchego cheese, (about 1 3/4 oz. s)

3 large eggs

1 1/2 C. fresh breadcrumbs

Vegetable oil, for frying

Fresh flat-leaf parsley sprigs, for garnish

 

Heat butter and oil in a medium saucepan over medium heat until butter has melted. Add onion; season with salt and pepper. Cook, stirring occasionally, until onion is translucent, about 3 minutes. Add flour; cook, stirring, 1 minute. Whisk in milk, and cook, whisking, 3 minutes. Whisk in ham and 1/3 C. cheese. Season with salt and pepper as desired. Spread mixture onto a baking sheet, and let cool completely. Mixture can be refrigerated in an airtight container up to 2 days. Whisk together eggs in a shallow dish. Stir together breadcrumbs and remaining 1/4 C. cheese in another shallow dish. Scoop T. of cooled mixture, and shape with floured hands into 2-inch ovals. Working with 1 oval at a time, coat in beaten egg, then in breadcrumb mixture. Transfer to a baking sheet lined with parchment paper. Heat 2 1/2 inches oil in a large, heavy stockpot until it registers 375 degrees on a deep-fry thermometer. Working in batches to avoid crowding, fry croquettes, flipping once, until dark golden brown, 1 to 2 minutes total. Using a slotted spoon, transfer to paper towels to drain. (Adjust heat between batches as needed to keep oil at a steady temperature.) Serve warm, garnished with parsley sprigs.

One 3-lb. boneless pork loin

Salt and freshly ground black pepper to taste

2 tsp. rosemary leaves, finely chopped

1 T. fresh ginger, peeled & minced

1 C.  dry white wine

3/4 C.  lemon marmalade (orange can be substituted)

1 T. unsalted butter ( at room temperature)

 

Preheat the oven to 350° F. Wash and trim all the excess fat from the pork loin. Place the pork loin in the Roasting Tray, sprinkling it with salt, black pepper, rosemary, and ginger. Add white wine into the bottom of the Roasting Tray and cook for 50 minutes; basting is needed. Take the Roasting Tray out from the oven. Use a small bowl to mix marmalade with some pan drippings; pour over the meat. Continue to cook for another 35-45 minutes, basting during the last 15 minutes, or until the internal temperature reaches 150° F – 160° F.  Slice and serve it with pan juices.

1 T. seasoned rice vinegar

1 T. chili-garlic sauce

1 tsp. hot chili oil

 

1/4 pound ground pork

2 oz. uncooked shrimp, shelled, deveined, and finely chopped

1 egg white

1/4 C. minced water chestnuts

2 T. minced Chinese celery

1 tsp. minced cilantro leaves

1/2 tsp. minced ginger

1/2 tsp. sugar

1/2 tsp. salt

1/8 tsp. sesame oil

Dash ground white pepper

24 potsticker wrappers

3 T. cooking oil

2/3 C. chicken broth or water

 

To make the sauce: In a medium bowl, combine the soy sauce, vinegar, chili-garlic sauce and hot chili oil. Mix well and reserve. To make the filling: In a large bowl, combine, the pork, shrimp, egg white, water chestnuts, celery, cilantro, ginger, sugar, salt and sesame oil. Season with a little pepper and mix, stirring rapidly in 1 direction until the mixture is well combined and spongy. To make the potstickers: Working in batches, lay 4 potsticker wrappers on a clean surface. Keep the remaining wrappers covered with plastic wrap to prevent drying. Put a heaping tsp. of filling in the center of each of the 4 wrappers. Brush the edges with water. Fold the wrappers in half over the filling, pinching the edges together to form semi-circles. Put the potstickers on a baking sheet seam-side up and cover with a clean towel. Repeat until all the potstickers have been formed. To cook the potstickers: Heat a large skillet over medium. Add about 1 1/2 T. of oil. When the oil is hot add half the potstickers, seam-side up. Cook the potstckers until the bottoms are golden and crisp, about 4 minutes. Add 1/3 C. broth. Reduce the heat to low, cover, and cook until the liquid is absorbed, 5 to 6 minutes. Transfer the cooked potstickers to a platter. Repeat, cooking the remaining potstickers. Serve the potstickers warm accompanied by the dipping sauce.

2/3 C. olive oil

1/3 C. sherry vinegar

1 1/2 T. peeled, grated fresh ginger

1 T. coarsely chopped rosemary leaves, plus 4 sprigs for garnish

2 tsp. sugar substitute (recommended: Splenda)

1/2 tsp. kosher salt

1/4 tsp. freshly ground black pepper

1/4 tsp. crushed red pepper flakes

2 (12-ounce) pork tenderloins, trimmed

2 firm-ripe peaches, pitted and halved

4 yellow grape or Compari tomatoes, cored and halved

12 radicchio leaves

6 C. cut romaine lettuce (about 1 large head)

1/4 C. crumbled Gorgonzola

 

Whisk together the oil, vinegar, ginger, rosemary, sugar substitute, salt, pepper, and pepper flakes in a bowl. Transfer half of the marinade to a gallon-sized sealable plastic bag with the pork. Marinate the pork in the refrigerator for at least 2 hours and up to 12 hours. Refrigerate the remaining marinade.  When ready to cook, build a charcoal fire or preheat gas grill  Remove pork from the bag and discard the used marinade. Place the tenderloins on the grill and cook, turning once, until cooked medium rare or when an instant-read thermometer stuck in the thickest part reads 145 degrees F, about 10 minutes. Transfer the pork to a cutting board, cover loosely with foil, and let rest for 5 minutes. Cut each tenderloin into 8 slices on the diagonal. Meanwhile, toss peach and tomato halves in a bowl with the unused reserved marinade. Place them cut side down on the grill, and cook until lightly browned but still firm, about 4 minutes. Transfer to the cutting board and cut each peach half into thirds.  To serve, fan 3 radicchio lettuce leaves on each of 4 plates. Place 1/4 of the romaine in the center of each. On 1 side of each plate, place 4 slices of pork and on the other side, place 3 wedges of peach and 2 tomato halves. Sprinkle with the cheese and drizzle each plate with 2 T. of the reserved marinade. Garnish each plate with a rosemary sprig and serve.

2 T. extra-virgin olive oil (EVOO)

1 lb. bulk sweet Italian sausage

1 large red onion, thinly sliced

1 large fennel bulb, cut in half lengthwise, cored, and thinly sliced

4 garlic cloves, chopped

2 T. fresh thyme leaves (4 sprigs, stripped and chopped)

salt and freshly ground black pepper

1 quart chicken stock or broth

1 C. milk

3/4 C. dry white wine

1/4 C. fresh flat-leaf parsley leaves, chopped

1 C. quick-cooking polenta (found in Italian foods or specialty foods aisles)

2 T. unsalted butter

1/2 C. grated Parmigiano-Reggiano, plus some for garnish

 

Heat a large nonstick skillet over medium-high heat. Add the EVOO. Add the sausage, breaking it up with the back of a wooden spoon, and cook until browned, 4-5 minutes. Add the red onions, fennel, garlic, thyme, salt and pepper. Continue to cook, stirring frequently, for about 4 minutes, or until the veggies wilt and the onions become translucent. While the veggies are cooking, start the polenta. In a sauce pot combine 2 1/2 C. chicken stock and 1 C.  milk. Season the liquid with salt and pepper. Place over medium-high heat and bring up to a simmer. Once the veggies have wilted, add the white wine and remaining chicken stock to the skillet. Turn the heat to high and bring up to a simmer. Cook to reduce the liquids by half, about 4-5 minutes. Stir in the chopped parsley. To the simmering chicken stock and milk add the polenta and whisk constantly until the cornmeal masses together. Add the butter and grated cheese, stirring to combine. Keep in mind that polenta is very forgiving; if it becomes too thick, you can always add more warm chicken stock or milk. Serve the polenta in a shallow bowl and top with a helping of the sausage and fennel ragout. Garnish with more grated Parmigiano-Reggiano

1/2 green bell pepper or Anaheim, seeded and chopped

1/2 to 1 lb. mushrooms, sliced

1 container grape or Santa tomatoes

1 C. sliced chard or spinach leaves

3 T. extra virgin olive oil

½ C. red wine

1 to 1 1/2 C. sliced smoked pork chops, smoked sausage, or grilled chicken strips

1 T. fresh marjoram leaves

Sea salt and freshly ground pepper blend

1/2 C. shaved Pecorino Romano or Asiago or shredded Parmesan or Asiago

 

Heat 2 T. oil in a large skillet over medium heat until hot. Add the onion, pepper, and garlic and sauté, stirring, for 2 minutes, or until crisp tender.  Add the mushrooms and cook for 1 minute, stirring constantly. Stir in the tomatoes and spinach.  Drizzle the wine into the mixture and cook, stirring, for about 3 minutes. Add meat if using. Stir in remaining oil, if needed, the marjoram, salt and pepper, and cook for three (3) minutes.  Add the pasta and toss well.

Place each chop between two sheets of plastic and pound with the smooth side of a meat tenderizer until thin (1/4″ – 3/8″). Dip meat into flour and coat. Blend together cheese, eggs, parsley, salt, pepper, nutmeg and milk. Dip cutlets into this batter, coat with crumbs and refrigerate for 1 hour. Cook breaded cutlets in butter until golden brown on both sides. Pour pan juices over cutlets and serve with lemon slices.

1 Clove Garlic — crushed
4oz. Mushrooms — sliced
10z. Flour
1/2 Pint Milk
3oz. Blue Cheese

Salt and freshly ground black pepper

8oz. Dried Fettuccine

5oz. Mozzarella cheese — chopped

Preheat oven to 180 C/350 F/Gas Mark 4. In a large saucepan, melt the butter, add the bacon and garlic and cook until lightly browned. Add the mushrooms and cook for a further 1-2 minutes. Stir in the flour. Remove from the heat, and gradually add the milk. Return the pan to the heat, and bring to the boil, stirring constantly until a smooth, glossy sauce has formed. Stir in the blue cheese and seasoning. Meanwhile, cook pasta following instructions on the pack. When cooked drain, and stir into the sauce. Transfer to an ovenproof dish. Sprinkle with Mozzarella cheese and cook in the preheated oven for 10-15 minutes until browned and serve with a mixed green salad.

2 T. maple syrup

2 T. orange juice concentrate

1 tsp. finely chopped seeded chipotle with 1/2 tsp. adobo

4 (3/4-inch thick) center cut pork loin chops (about 8 ounces each)

1/2 tsp. salt

 

In a small bowl combine the maple syrup, orange juice concentrate and chipotle. Preheat grill pan. Sprinkle both sides of the chops with salt. Brush 1 side of chops generously with glaze. Place on grill pan glaze side down. Brush other side with glaze. Cook 3 to 4 minutes per side over medium-high heat.

Chorizo and Shrimp Quesadillas with Smoky Guacamole2 ripe Haas avocados

1 lime, juiced

A couple pinches salt

1/4 C. sour cream

2 chipotle peppers in adobo, available in cans on specialty food aisle in Mexican section

1/2 lb. chorizo sausage, sliced thin on an angle

1 T. extra virgin olive oil, plus some for drizzling

1 clove garlic, cracked away from skin and crushed

12 large shrimp, peeled and deveined, tails removed, ask for easy-peels at fish counter

Salt and freshly ground black pepper

4 (12- inch) flour tortillas

1/2 lb., 2 C., shredded pepper Jack cheese

 

Cut avocados all the way around with a sharp knife. Scoop out the pit, then spoon avocado flesh away from skin into a food processor. Add the juice of 1 lime, a couple of pinches salt, sour cream and chipotles in adobo. Pulse guacamole until smooth. Transfer to a serving bowl.  Heat a 12-inch nonstick skillet over medium high heat. Brown chorizo 2 to 3 minutes, then remove from pan. Add oil, garlic, then shrimp. Season shrimp with salt and pepper and cook shrimp until pink, 2 or 3 minutes. Transfer shrimp to a cutting board and coarsely chop.  Add a drizzle of oil to the pan and a large tortilla. Cook tortilla 30 seconds, then turn. Cover 1/2 of the tortilla with a couple of handfuls of cheese. Arrange a layer of chorizo and shrimp over the cheese and fold tortilla over. Press down gently with a spatula and cook tortilla a minute or so on each side to melt cheese and crisp. Remove quesadilla to large cutting board and repeat with remaining ingredients. Cut each quesadilla into 5 wedges and transfer to plates with your spatula. Top wedges of quesadillas with liberal amounts of smoky guacamole.

Fregola with Pancetta & Pecorino

Fregola with Pancetta & Pecorino

1 T. extra virgin olive oil

2 oz. pancetta, minced

1/2 large onion, minced

1 large garlic clove, minced

1/2 lb. fregola (pasta similar to couscous)

2 1/2 C. chicken broth

2 T. freshly grated pecorino cheese

1 T. minced Italian parsley

Salt and fresly ground pepper

 

Cook the olive oil and pancetta in a saucepan over moderately low heat until the pancetta begins to crisp.   Add the onion and garlic and sauté until the onion is soft, about 10 minutes. Add the fregola and the broth. Bring to a simmer, cover and adjust the heat to maintain a gentle simmer. Cook for 15 minutes.  Remove from heat and stir in the pecorino, parsley and salt and pepper to taste.

6 C. hot water

1 8–oz pkg spinach linguine or noodles

1 1- oz. can cheddar cheese soup

1 5—oz can evaporated milk

1 tsp. prepared mustard

1/4 tsp. pepper

1 C. diced cooked ham

1 4–oz can mushrooms, drained

1/2 C. sliced ripe olives

1/2 C. peanuts

 

Place water in a 4-qt casserole. Cover & microwave on high 6 minutes or till water boils. add linguine; stir. Cover & microwave on high 4 minutes; stir. Cover again and microwave on high 4 minutes or till pasta is tender; drain.  Stir in soup, evaporated milk, mustard & pepper. Fold in ham, mushrooms, olives & peanuts. Cover again. Microwave on high 6-8 minutes or till steaming hot, stirring midway through cooking.
