Mediterranean Chopped Salad
1 cup diced tomato
1/2 cup diced peeled English cucumber
2 T. chopped green onions
2 T. chopped fresh cilantro
2 tsp. minced seeded jalapeƱo pepper
2 tsp. fresh lemon juice
2 tsp. olive oil
1/4 tsp. salt
1/8 tsp. black pepper
Combine all ingredients in a medium bowl; toss gently. Let stand for up to 2 hours. 1 C. 34 calories
