Peanutty Spread
1 cup silky tofu, drained (about 9 ounces)
1/3 cup peanut butter
4 teaspoons honey
2 teaspoons lime juice
Place all ingredients in jar of blender or bowl of food processor. Blend or process until smooth. Add a few teaspoons of water if necessary. Store in refrigerator
Yield: 1 ½ cups; 12 (2-tablespoon) servings
