Dilled Rice Salad

Dilled Rice Salad

2 T. white vinegar

1 T. lemon juice

1 T. vegetable oil

2 T. chopped fresh dill weed

1/2 tsp. salt

1/4 tsp. fresh ground black pepper

3 C. cooked rice, cooled

1 red bell pepper, chopped

1/2 lb. snow peas, julienned

 

Combine vinegar, lemon juice, oil, dill, salt, and pepper in a large bowl.  Add rice, red pepper, and snow peas; toss.  Serve chilled.
