Lime Vinaigrette
3 T. fresh lime juice
1 1/2 T. champagne vinegar
2 tsp. grated lime zest
1 T. minced garlic
2 T. chopped cilantro and/or mint
1 tsp. chopped, seeded Serrano chile (or to taste)
1 1/2 tsp. toasted ground cumin
3 T. olive oil
Salt and freshly ground pepper, to taste
Whisk all ingredients together and store covered in refrigerator up to 3 days.
