After Five Bean Soup

 

2 T. butter

1/2 C. diced onion

1/4 C. diced carrots

2 diced zucchini

1 can (16-ounce) spicy pinto beans

1 can (16-ounce) refried beans

1 very small seeded and diced Anaheim pepper

1 (14-1/2-ounce) chicken broth

1 whole chicken breast, cooked and diced

Cilantro and chopped chives

Salsa and avocados

Cheddar cheese and sour cream

Fritos or Doritos

 

Melt butter in a large pot. Add onion, carrots, and zucchini and sauté until tender (6 to 8 minutes). Add beans, broth, and chicken and simmer for 10 minutes. Garnish with cilantro and serve with choice of toppings.
