Pita with Cherry Tomato and Gorgonzola Salad

2 T. extra virgin olive oil

1 T. red wine vinegar

1 tsp. dijon mustard

1/2 tsp. sugar

1/2 tsp. kosher salt

1/4 tsp. freshly ground black pepper

8 C. mesclun greens, washed and spun dry

1/2 C. thinly sliced red onion, rinsed and drained

1/2 C. thinly sliced celery heart

1 C. cherry tomatoes, halved

4 ounces gorgonzola, feta, or other blue cheese, crumbled add to shopping list

4 whole wheat pitas, halved

 

Whisk together oil, vinegar, mustard, sugar, salt, and pepper. Lightly toss with salad greens. Add onion, celery, tomatoes, and cheese. Stuff pita halves with salad, and serve.
