Pickled Fiddlehead Ferns
½ cup sugar
½ cup apple cider vinegar
½ cup water
1 T. salt
1 tsp. red pepper flake
Rind of 1 orange peel
6 each black peppercorns
½ pound fiddlehead ferns, cleaned, trimmed and blanched for 1 minute
Two days before making dish, boil first six ingredients for pickle liquid. Cool. Pour over blanched fiddleheads. Chill.
