Tomato, Lime & Onion Salad
4 C. Vertically sliced Onions
1/4 C. fresh Lime Juice
1/2 tsp. Kosher Salt
1 C. chopped Tomato (sub quartered cherry tomatoes, if desired)
1/4 C. chopped fresh Cilantro
2 tsp. chopped fresh Mint
1 tsp. Lime Zest
Combine first 3 ingredients in a medium bowl and let stand at room temperature 1 hour. Stir in the tomato and remaining ingredients.
