Amy’s Sautéed Zucchini

Amy’s Sautéed Zucchini

2 Zucchini, sliced

1 Large ripe tomato, blanched, peeled, and chopped

1 Small white onion, chopped

Pat of butter or a splash of olive oil

Salt and Pepper

 

Melt butter (or heat olive oil) in a fry pan. Add zucchini slices and chopped onion and sauté until soft. Add tomato and stir until tomato is cooked down to create a sauce. Salt and pepper to taste.
