Aji-Li Mojili Sauce

Aji-Li Mojili Sauce

6 each whole green chiles, stemmed and seeded

1/4 C. minced garlic

6 whole peppercorns

1/4 C. white wine vinegar

1/4 C. strained fresh lime juice

2 tsp. salt

1/2 C. olive oil

 

Combine chiles, garlic, peppercorns, and vinegar in a food processor.  Process to a smooth puree.  Add the remaining ingredients, pulse to mix well.  Cover and chill.  Stir before using.
