Spicy Soy Dipping Sauce
1/3 cup soy sauce
1/3 cup rice wine vinegar
1/3 cup scallions, greens only, 1/8 inch slice
1 tablespoon toasted sesame oil
1 tablespoon sambal-oelek (See Below)

In a small bowl, combine the soy sauce, vinegar, scallions, sesame oil and sambal-oelek. Use immediately or store.

sambal-oelek :Â There are many hot chile pepper pastes used as table condiments in China and Southeast Asia; sambal oelek is the most common and most popular. Containing chiles, salt, vinegar and sometimes garlic and tamarind, the fiery paste gives food a powerful flavor boost.

1/4 cup vegetable stock
1/2 cup light soy sauce
1 tablespoon rice wine or dry sherry
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon sugar or honey
1 teaspoon hot oil

Combine the ingredients in a small boil. Stir to dissolve the sugar, then cover and refrigerate until serving.
