Foraged Huckleberry Donuts
Foraged Huckleberry Donuts
1 C. Huckleberries, smaller sized is better
1⁄3 C. water
1 C. baking mix, such as bisquick (or homemade version)
3 T. white sugar
2 T. dry milk
2 T. dry egg powder
1⁄4 C. cooking oil
1 paper lunch bag
1⁄4 C. powdered sugar
In bowl, combine baking mix with water. Stir in granulated sugar, dry milk, and egg powder. If too dry, you can add a bit more water, but it should be a dough, not a batter. Gently mix in huckleberries. Place powdered sugar in paper bag. Heat half oil in a pot over medium heat. Add in spoonfuls of dough without touching and cook until browned on one side, flip, and brown the other side. While still hot, place in paper bag and toss to coat. Repeat, adding and heating more oil if necessary, until dough is used up.
