¾ C. cottage cheese full-fat gives the creamiest texture
1 C. shredded Gruyere cheese don’t skimp—this is where the magic happens!
6 strips cooked bacon chopped (about ½ C.); crispy is key
¼ tsp. salt
⅛ tsp. black pepper
pinch cayenne pepper optional, but adds a nice kick
cooking spray or butter for greasing
Preheat your oven to 300°F. Grease a 12-cup muffin tin with cooking spray or butter.
Cook 6 strips of bacon at 400°F for 15-18 minutes until crispy. Cool and chop into small pieces. In a blender, combine eggs, cottage cheese, Gruyere, salt, pepper, and cayenne. Blend until smooth. Divide chopped bacon among muffin cups. Pour egg mixture over bacon, filling each C. about ¾ full. Pour hot water into the roasting pan until it reaches halfway up the sides of the muffin tin. Cover with aluminum foil. Bake for 22-25 minutes until set but slightly jiggles in the center. Cool in the tin for 5 minutes. Run a knife around edges and gently pop out.
