Mushrooms with Lemon Dressing
4 tsp. lemon juiceÂ
1/2 tsp. anchovy pasteÂ
1/2 tsp. saltÂ
1/2 tsp. black pepperÂ
5 T. olive oilÂ
1 1/4 lbs mushrooms, cut into 1/8 inch slicesÂ
3 T. fresh parsley, choppedÂ

In a large bowl, whisk together lemon juice, anchovy paste, salt and pepper. Stir in the oil. Add the mushrooms and parsley and toss before serving.
