German Onion Pie
1 9-inch pie crust
1 pound onions, cut into rings (mix different varieties for color and texture)
½ pound bacon, cubed
½ C. heavy cream
⅓ C. fat-free sour cream
2 eggs
¼ tsp. nutmeg
Salt and pepper to taste
Preheat your oven to 395°F. Place your pie crust into a pie dish and set it aside. In a large microwave-safe bowl, place the onion rings and top them with the cubed bacon. Lightly coat the onion and bacon mixture with cooking spray, then microwave on high for 10 minutes. In a separate large mixing bowl, whisk together the heavy cream, sour cream, eggs, nutmeg, salt, and pepper until smooth. Combine the onion and bacon mixture with the cream mixture, stirring until well-blended. Pour the mixture into the prepared pie crust. Bake in the preheated oven for 40 minutes, or until the filling is set and the top is golden brown.
