6 large eggs
1/4 cup mayonnaise
1 tablespoon gin (or vodka)
1 teaspoon dry vermouth
1 1/2 teaspoons olive brine
1/4 teaspoon garlic powder
Kosher salt, to taste
Freshly ground black pepper, to taste
2 tablespoons finely chopped green olives, plus more for garnish
1 tablespoon finely chopped parsley
Paprika or chili flakes, for garnish (optional)
Place eggs in a medium saucepan and cover with cold water. Bring to a boil over medium heat, then remove from heat, cover, and let sit for 10 minutes. Drain and transfer eggs to a bowl of ice water.
