Buttery No-Cook Couscous
1¾ C. boiling water (or use stock if you like)
1½ C. couscous (regular or whole wheat)
2 to 3 T. butter (salted or unsalted)
½ tsp. kosher salt
In a large bowl, combine the boiling water, couscous, butter, and salt, and cover with a plate or pot cover. Let sit until the liquid is absorbed, 5 to 10 minutes. 2. Fluff with a fork and serve.
