Breakfast Salad
1 C. cubed Watermelon
8 sliced Radishes
2 ounces Feta Cheese, crumbled
3-4 leaves Mint, roughly chopped
2 T. Pepitas
Squeeze of Lime
1 T. Olive Oil
Arrange the chopped watermelon, sliced radishes, crumbled feta, and chopped mint leaves in a bowl. Sprinkle with the pumpkin seeds and drizzle with the lime juice and olive oil.
