Vegan Avocado-Based Vanilla Ice Cream
2 medium ripe avocados
1 1/3 cup(s) condensed coconut milk
1 can full-fat coconut milk
1 can light coconut milk
2 tsp. vanilla extract
Place all of the ingredients in a blender and blend until smooth. Pour the mixture into a 2-quart ice cream maker and freeze according to your ice cream maker’s directions.
