Honey Strawberry Salsa
1 1/2 cups sweet red peppers, diced
1 cup sliced fresh strawberries
1 cup green bell peppers, diced
1 cup fresh tomato, diced
1/4 cup Anaheim pepper, chopped
2 T cilantro, finely chopped
1/3 cup honey
1/4 cup fresh lemon juice
1 T tequila, optional
1/2 tsp. crushed dried red chili pepper
1/2 tsp. salt
1/4 tsp. pepper
Combine all ingredients in glass container; mix well. Cover tightly and refrigerate overnight to allow flavors to blend. Serve with chips, over grilled chicken or fish.
