Zesty Lemon Mint Turmeric Dressing

 

2 T. vinegar, ( tarragon or white wine vinegar)

1/4 C.+ 1 T. olive oil

3 T. lemon juice

1/2 tsp. mustard, (hot english mustard OR Dijon mustard)

1/4 tsp. salt

1/4 tsp. ground black pepper

9 mint leaves ( or 1 full branch ),, finely chopped

1 tsp. dried parsley

1/4 tsp. garlic powder

1/2 tsp. ground turmeric

 

Put all of the ingredients into a medium sized bowl and whisk until the mixture thickens.
