Swiss Seak with Rice
1 lb. top Sirloin
1 Onion, sliced
1 Bell Pepper, sliced
1 C. quick Cooking Brown Rice, uncooked
2 medium Carrots, sliced
1 (16oz) can diced Tomatoes, not drained
1 2/3 C. Beef Broth
1/2 C. Red Wine
1 tsp. chopped Garlic
1/2 tsp. Oregano
1/2 tsp. Basil
Preheat oven to 350 degrees. Cut meat into serving pieces. Spray a 4 quart covered casserole with non-stick cooking spray. Add the meat and the remaining ingredients. Cover and bake for 1 1/2 hours.
