Avocado Goddess Dip
1 avocado, peeled and pitted
1/2 cup mayonnaise
1 clove garlic, smashed
2 T. lemon juice (from about 1 lemon)
1/4 cup chopped green onion
1/2 cup flat-leaf Italian parsley
1/2 cup fresh basil leaves
1/4 tsp. kosher salt Freshly ground black pepper
Combine all ingredients in a blender or food processor until smooth. Store refrigerated. Delicious with zucchini-carrot pancakes or simple vegetable crudites.
