Instant Pot Pumpkin Pie Steel Cut Oatmeal
2 ½ C. Water
1 C. steel cut oats; do not use the quick cooking variety
1/2 C. canned pumpkin
1 tsp. pumpkin pie spice
1/4 tsp. salt
1/3 C. brown sugar
3 C. water
1 C. half & half or alternative milk – optional, to serve
1/2 C. toasted nuts for optional topping
- Place the water, oats, pumpkin puree, maple syrup, chia seeds, pumpkin pie spice, and sea salt in an electric pressure cooker and stir to combine. 2. Place the lid on the pot. Make sure the vent valve is in the SEALING position. Using the display panel, select the MANUAL/PRESSURE COOK function and HIGH PRESSURE, and use the +/− buttons until the display reads 15minutes. 3. When the cooker beeps to let you know it’s finished, switch the vent valve from the SEALING to the VENTING position, administering a quick release. Use caution while the steam escapes—it’s hot. 4. Stir in the walnuts and serve with a drizzle of milk of your choice, if desired, to cool the oats faster.
