Peanut Butter Delight
1 C. part-skim ricotta cheese
1/4 C. unhomogenized smooth peanut butter
2 T. skim milk
21/4 tsp. vanilla extract
1/2 tsp. ground cinnamon
2 T. sugar
Combine all the ingredients in a food processor and blend until satin smooth. If stored, tightly covered, in the refrigerator, it will keep for about 1 week.
Makes 1 1/4 C.
