Herbal Balsamic Vinaigrette
1 cup olive oil
3 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon raw honey
2 tablespoons chopped chives or chive blossoms
2 tablespoons fresh oregano
2 tablespoons fresh tarragon
2 tablespoons fresh thyme
1-2 garlic cloves, roughly chopped
Salt and freshly ground black pepper
Combine the oil, vinegar, mustard, and honey with the chives, oregano, tarragon, thyme, garlic, and a pinch of salt and pepper in a blender and blend until smooth. Add more vinegar or mustard if you like dressing with a more pungent flavor. Store in the refrigerator, where the dressing will keep for 2 to 3 weeks.
