Carrot Salad with Cumin
1/2 lb. carrots (about 3), peeled and coarsely grated
1/4 C. chopped fresh parsley
1 1/2 tsp. lemon juice
1 T. extra-virgin olive oil
1/2 tsp. minced garlic
1/4 tsp. ground cumin
1/8 tsp. salt, or to taste
Freshly ground pepper to taste
Combine all ingredients in a small bowl; toss to mix.
