Spanish White Bean Salad

Spanish White Bean Salad

400 grams cannellini beans (drained and rinsed)

2 red pepper (skinned, in oil, cut into long strips)

2 spring onions (sliced)

1 T. capers (rinsed)

2 T. white wine vinegar

1 T. extra-virgin olive oil

salt (to taste)

black pepper (to taste)

 

Put all the ingredients in a bowl and mix gently together.  Serve as a tapas, side dish or even as a main meal.
