Mixed Greens with Tomato Balsamic Vinaigrette
1 Tomato
3 T. Balsamic Vinegar
2 T. minced Shallot
1 ½ T. EVOO
¼ tsp. Salt
¼ tsp. Pepper
5 C. Mixed Greens
¾ C. Garbanzo Beans, drained and rinsed
2 Tomatoes, sliced
1 small Cucumber, seeded, and sliced
½ C. thinly sliced Red Onions
Seed and chop a tomato; you should have about ¾ C.. Add remaining dressing ingredients along with tomato to blender and puree until smooth. Toss salad ingredients, divide among 4 plates and drizzle each with ¼ dressing.
