Green Mayonnaise

Green Mayonnaise

2 C. Cooked packed fresh Spinach leaves, cooked, drained and finely chopped
1 tsp. Dijon Mustard
1 tsp. Lemon Juice
1 T. minced fresh Parsley
1 tsp. minced fresh Chives
1 1/2 tsp. minced Tarragon (or 1/2 tsp. dried)
2 C. reduced fat Mayonnaise

To make mayonnaise combine all ingredients in a blender and process until smooth.

Yield: 2 1/2 C.
Serving Size: 2 T.
