Spanish Turkey Chops
4 turkey Cutlets
1 C. uncooked white rice
1/2 onion, thinly sliced
1/2 bell pepper (any color), thinly sliced
1 C. Water
1 C. tomato juice
1/4 C. ketchup
1/4 C. vinegar
2 T. Worcestershire sauce
2 T. Brown Sugar
1/2 T. paprika
1 tsp. dry mustard
1 tsp. salt, optional
1/2 tsp. chili powder
1/8 tsp. pepper
Brown chops on both sides in non-stick pan with a tightly fitting lid. Place onion and pepper rings on top. Scatter rice on top and around chops. Combine remaining ingredients and pour over all. Reduce heat to low, cover and simmer 30-40 min.
Yield: 4 servings
Serving Size: 1 4oz. Turkey Chop + 1/4 cooked rice & veggies (about 2/3 C.)
