Clam Fritters
1 C. Flour
1 1/2 tsp. Baking Powder
1 tsp. grated Onion
1 T. Melted Butter
2/3 C. Clam Juice
1 Egg
1/2 tsp. Salt
1/8 tsp. Pepper
1 C. minced Clams, drained
Sift together dry ingredients; add liquid, beaten egg, onion and butter. Mix in the clams and fry at 350 degrees. Drain and serve immediately. Makes 12 fritters.
