Mexi-Gilroy Garlic Dip
1 cup small curd cottage cheese
1 cup sour cream
1 (4-ounce) can diced green chilies
1 (4-ounce) can sliced black olives
6 cloves garlic, finely minced
4 green onions, with tops, finely chopped
1 large tomato, finely chopped
1 tsp. fresh lemon juice
2 T. mayonnaise
1/2 tsp. salt, or to taste
Freshly ground pepper to taste
Mix all ingredients together; cover and refrigerate for at least 1 hour to allow flavors to mingle. Serve with crackers, chips or fresh vegetables.
