Dilly Beans

4 pints

2 lb. fresh green beans (wash and trim ends)

4 heads fresh dill weed (separate from stems)

1 tsp. cayenne pepper

4 cloves garlic

4 red chili peppers (optional)

Brine – combine ingredients and bring to a boil.

2 ½ cups water

2 ½ cups cider vinegar

¼ cup pickling salt

 

  • Sanitize jars, keep warm. Clean rings if needed. Simmer lids in boiling water.

 

Fill per jar:

.5 lb.  green beans

1 head dill weed

1 clove garlic

¼ tsp. cayenne pepper

1 red chili pepper (if hotter bean is desired)

Add brine to fill line (at top of neck of jar)

 

  • Clean jar rim with rubbing alcohol. Place lid on jar rim, add ring & tighten.
  • Process jars in a hot water bath at boil for 10 minutes, cool completely.
