Sheet Pan Supper: Smoked Salmon Egg Boats

2 sourdough bâtard loaves or 4 sourdough demi baguettes
1/2 cup shredded Gruyère or Swiss cheese (about 2 ounces)
4 ounces sliced smoked salmon
12 large eggs
1/2 cup crème fraîche (or sour cream in a pinch)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 scallions (white and light green parts only), thinly sliced
2 tablespoons capers, drained
2 tablespoons chopped fresh chives

Preheat the oven to 350°F with a rack in the center position. Line a sheet pan with parchment paper. Using a serrated knife, cut a V-shaped section from the top of each bread loaf, stopping the knife about 1/2 inch from the bottom of the loaf. Remove the loose bread tops, and scoop out a bit of the inside, too, to form the boats. Discard the scooped bread (or save it to make homemade breadcrumbs). Place the boats on the prepared pan. Evenly distribute the shredded cheese and smoked salmon between the cavities of the boats. Whisk together the eggs, crème fraîche, salt, pepper, and scallions in a medium-sized bowl. Pour the egg mixture into the boats, distributing it evenly between them. Scatter the capers atop the egg filling. Bake until the eggs are puffed and no longer jiggle when you shake the pan gently, 30 to 40 minutes. (If using demi baguettes, check for doneness around 20 minutes.) Let the boats cool for about 5 minutes. Sprinkle them with the fresh chives, slice into 8 pieces total, and serve warm.

1 fennel bulb (about 1/2 pound), cut in half lengthwise, sliced into 1/4″ wedges with core intact
1/2 pound seedless red grapes (about 1 cup)
1 tablespoon olive oil
8 skin-on, bone-in chicken thighs (about 2 pounds)
1/4 cup torn fresh mint leaves

Position rack in upper third of oven and preheat to 425°F. Mix brown sugar, cumin, salt, pepper, and cayenne in a small bowl. Toss squash, fennel, and grapes with oil and half of spice mixture on rimmed baking sheet and arrange in a single layer. Rub chicken thighs with remaining spice mixture and arrange, skin side up, on top of fruit and vegetables. Roast until skin is browned and an instant-read thermometer inserted into the thickest part of chicken registers 165°F, about 35 minutes; if chicken skin or vegetables start to burn, move pan to a lower rack to finish cooking. Divide chicken, fruit, and vegetables among 4 plates and top with mint.

1/2 cup balsamic vinegar
3 tablespoons Dijon mustard
1/2 cup plus 2 tablespoons extra-virgin olive oil, divided
2 tablespoons chopped fresh oregano leaves, divided

3/4 teaspoon freshly ground black pepper, divided
1 (1 1/2-pound) skirt steak, cut crosswise into 2 equal pieces
1 bunch broccolini (about 10 ounces), trimmed, halved lengthwise (quartered lengthwise if large)
1 (15-ounce) can white beans, rinsed, drained

Finely chop 2 garlic cloves. Place in a large bowl or shallow baking dish, then whisk in vinegar, Dijon, 1/2 cup oil, 1 T. oregano, 1 tsp. salt, and 1/2 tsp. pepper. Reserve 1/4 cup vinaigrette for serving; add steak to remaining vinaigrette and turn to coat. Let marinate at least 15 minutes or up to 1 hour. Meanwhile, preheat broiler and thinly slice remaining 2 garlic cloves. Toss broccolini, remaining 2 T. oil, 1 T. oregano, 1/2 tsp. salt, and 1/4 tsp. pepper on rimmed baking sheet. Broil 5 minutes, then remove from oven. Add beans and garlic and toss to combine. Set wire rack on top of broccolini mixture. Place steak on rack; discard vinaigrette. Broil steak, turning halfway through, until cooked to desired doneness, about 3 minutes per side for medium-rare. Let steak rest 5 minutes. Meanwhile, transfer broccolini mixture to a medium bowl and toss with 1 T. reserved vinaigrette, then divide among 4 plates. Thinly slice steak against the grain and serve with broccolini mixture and remaining vinaigrette alongside.

3 oil-packed anchovy fillets, drained, finely chopped
1 tablespoon red wine vinegar

1 bunch curly kale (about 8 ounces), ribs and stems removed, coarsely chopped

Position racks in upper and lower thirds of oven and preheat to 425°F. Arrange chicken cutlets in a single layer on rimmed baking sheet and season with 1/2 tsp. pepper. Place 1 sage leaf on top of each cutlet, then wrap each in 1 slice of prosciutto, starting from the top and wrapping in a single layer, making sure cutlet stays flat. Finely chop remaining 4 sage leaves and toss with potatoes, garlic, 1 T. oil, 1/2 tsp. salt, and 1/2 tsp. pepper on second rimmed baking sheet. Cook chicken in upper third of oven and potatoes in lower third until prosciutto is crisp and an instant-read thermometer inserted into the thickest part of chicken registers 165°F, 12-14 minutes. Meanwhile, whisk anchovies, vinegar, honey, and remaining 2 T. oil, 1/4 tsp. salt, and 1/4 tsp. pepper in a large bowl; add kale and toss to coat. Remove both baking sheets from oven; let chicken rest. Spread kale evenly over potatoes and return to upper third of oven. Roast until potatoes are tender and kale is browned at edges, about 5 minutes more. Divide chicken among 4 plates. Serve potatoes and kale alongside.

2 ounces dried Spanish chorizo, casing removed, thinly sliced (about 1/2 cup)
1 shallot, thinly sliced
4 ounces medium shrimp, peeled, deviened, tails left intact
1 pound mussels, scrubbed, debearded
3/4 cup canned chopped tomatoes
1/2 cup frozen peas
1/2 cup sliced roasted red peppers
1/4 cup green olives (such as Cerignola or Castelvetrano), pitted, sliced
1/4 cup coarsely chopped fresh parsley

Arrange rack in center of oven and preheat to 350°F. Coat rimmed baking sheet with cooking spray. Spread rice on sheet and toast 5 minutes. Meanwhile, bring broth, bay leaf, pepper, paprika, saffron, and 1 tsp. salt to a low boil over medium heat in a medium saucepan. Pour broth mixture into a measuring cup with a spout. Remove rice from oven and stir. Arrange chorizo and shallots evenly over rice and pour broth mixture carefully over. Cover baking sheet with inverted second baking sheet, then bake 20 minutes. Carefully remove top baking sheet, stir rice mixture, and continue to bake, uncovered, 5 minutes more. Combine shrimp with remaining 1/2 tsp. salt in a medium bowl. Remove baking sheet from oven, discard bay leaf, and stir rice mixture again. Scatter shrimp, mussels, tomatoes, peas, red peppers, and olives over rice. Continue baking until rice is tender, shrimp is opaque and pink, and mussels have opened, about 8 minutes more. Transfer mixture to a serving bowl and toss with parsley.

½ tsp. red pepper flakes
½ tsp. garlic powder
2 cups broccoli florets
2 cups cauliflower florets
2-4 salmon fillets

Preheat oven to 400°F. Arrange broccoli and cauliflower florets on a sheet pan. Season with olive oil, garlic, chili flakes, lemon juice, salt and pepper. Bake for 8-10 minutes. Remove sheet pan from oven and arrange salmon fillets in the centre of the pan. Season the salmon with olive oil, garlic, chili flakes, lemon juice, salt and pepper. Bake for an additional 10-15 minutes or until salmon is cooked to your liking. Enjoy!

Preheat oven to 400. In small bowl combine oil, chili powder, cumin, chili flakes, garlic, salt and pepper. Toss chicken, veggies and oil mixture together on a large sheet pan with one inch edge. Spread out evenly. Bake for 25-30 minutes until chicken is cooked and the veggies are soft with a crispy edge. Serve with tortillas, sour cream, avocado and all your favorite fajita fixins!

Preheat oven to 400°F. In a large bowl toss potatoes with olive oil, garlic powder, salt and pepper. Pour potatoes onto a sheet pan and bake for 15-20 minutes or until they start to brown. Remove potatoes from the oven and add green beans, tomatoes, olives and capers.
Arrange halibut fillets in the centre of the sheet pan. Season everything with olive oil, salt and pepper. Bake for another 10-20 minutes or until the halibut fillets are cooked through. Enjoy!

1 small head cauliflower, cut into small florets
1 lemon, cut into slices
4 garlic cloves, left whole with skin on
2 1/2 Tbsp za’atar
salt and pepper
pinch red pepper flakes (optional)
olive oil
1 15 oz can chickpeas, drained and rinsed

Preheat oven to 425 degrees. Cut whole chicken down the middle of breasts and flatten slightly. Place on top of foil lined sheet pan. Cover chicken with 1 1/2 Tbsp za’atar, making sure to cover skin, under skin and the underneath side. Places 2-3 slices of lemon underneath chicken skin. If you don’t feel comfortable placing lemon inside the chicken skin, just place on top. Place remaining lemon and 1 garlic clove underneath chicken. Spread cauliflower all over the sheet pan and top with remaining 1 Tbsp za’atar and garlic cloves. Drizzle the chicken and cauliflower with olive oil and sprinkle with salt and pepper. Toss/rub to coat completely. Roast in pre-heated oven for 35 minutes. Remove from oven and turn cauliflower, which will have shrunk in size slightly. Move cauliflower over to make room for chickpeas. Spread chickpeas on pan and drizzle with a touch more olive oil, and pinch of salt and red pepper flakes if desired. Place back into oven for another 15-20 minutes, or until chicken is crispy and golden and the cauliflower is caramelized to your liking. Serve immediately.

Sheet Pan Supper: Curried Chicken Thighs with Cauliflower, Apricots & Olives

This one-pan meal is a riff on Chicken Marbella, the famous Silver Palate dish featuring sweet roasted prunes and briny olives. In this version, made with boneless chicken thighs and cauliflower, the original seasonings are replaced with Moroccan-inspired spices, and dried apricots sub for the prunes. For the best flavor, start marinating the chicken in the morning or, better yet, the night before.

Curried

8 boneless, skinless chicken thighs (about 2 lb. total)
1/4 cup extra-virgin olive oil
1 Tbs. apple cider vinegar
4 tsp. curry powder
1 tsp. smoked paprika
1/2 tsp. ground cinnamon
1/4 tsp. cayenne pepper
Kosher salt
1 large head cauliflower, cut into bite-size florets
3/4 cup coarsely chopped dried apricots, soaked in hot water for 5 minutes and drained
1 cup pitted green olives, halved or quartered if large
1/3 cup chopped fresh cilantro
1 large lemon, cut into 4 to 6 wedges

In a medium bowl, combine the chicken thighs with 2 Tbs. of the oil, the vinegar,2 tsp. of the curry powder, 1/2 tsp. of the paprika, the cinnamon, cayenne, and 3/4 tsp. salt, tossing to coat. Cover and refrigerate for at least 8 hours and up to overnight. Position a rack in the center of the oven and heat the oven to 450°F. Line a large rimmed sheet pan with parchment. On the pan, combine the cauliflower with the remaining 2 Tbs. oil, 2 tsp. curry powder, 1/2 tsp. paprika, and 3/4 tsp. salt, tossing to coat. Add the apricots and olives, and spread in a single layer. Remove the chicken thighs from the marinade, fold them back into their original shape, and place them on top of the cauliflower, spaced evenly apart. (Discard any remaining marinade.) Roast, rotating the pan halfway through, until the cauliflower browns and the chicken cooks through (165°F), about 35 minutes. Remove the chicken from the pan and toss the cauliflower mixture with the pan drippings. Serve the chicken and cauliflower mixture sprinkled with the cilantro and the lemon wedges on the side.

In the recipe in the book, Sodha has you mash the ginger, garlic, chiles and spice in a mortar and pestle to a paste. I suppose you could also process them in a food processor or blender. I went for the method that required the least extra objects and just minced everything and mixed it, which is how I’ve written it below. If you’d prefer not to mince, definitely use one of these other methods.

Worried about spiciness? Because I think this is a good thing to know about whoever is writing your recipes, I consider myself a moderate heat appreciator, but I cook fairly mild because my 6.5 year old is not. Even with a full jalapeno in there (which can run quite mild or hot, so not necessarily a perfect measure) and a 1/4 teaspoon spicy chili powder, this was just lightly hot. The yogurt really dulls the heat. Hope that offers a guidance so you can adjust it to your preference.

For the chicken
1 3/4-inch piece of ginger, peeled and minced (see Note up top)
4 cloves of garlic, minced or pressed
1 fresh green chili (I used a jalapeno), seeded and minced
1/2 cup whole-milk yogurt
1 teaspoon kosher salt
1/2 teaspoon chili powder or cayenne, or adjusted to taste (I used 1/4 teaspoon)
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
3/4 teaspoon granulated sugar
1 teaspoon paprika
1 teaspoon garam masala
2 pounds chicken thighs, drumsticks or halved chicken breasts (all skin-on, bone-in)
For the vegetables
3 tablespoons olive oil
1 1/4 pounds (about 4 medium) Yukon Gold potatoes, peeled if desired, cut into 3/4-inch chunks
1 3/4 pounds (1 small or half a very large head) cauliflower, cut into 3/4-inch-wide florets
1/2 teaspoon kosher salt
1/2 teaspoon cumin seeds
To finish, if desired
A few thin slices of red onion
Lemon wedges
Salt
Dollops of yogurt
A few tablespoons roughly chopped cilantro, parsley or mint, or a mix thereof

Combine ginger, garlic, fresh chili, yogurt, salt, spices and sugar in a freezer bag, bowl or container. Add chicken pieces and toss to coat evenly. Let marinate for 15 minutes or up to a day in the fridge. When you’re ready to cook the dish, heat your oven to 425°F. Line a half-sheet (13×18-inch) with foil and coat it with 1 tablespoon of the olive oil. Add potatoes, cauliflower, salt, cumin and remaining 2 tablespoons olive oil and toss together with your hands until evenly coated. Remove chicken from marinade and leave excess behind. Make spaces in the vegetables for chicken parts throughout the pan. Roast in oven for 20 minutes, then toss the potato and cauliflower to ensure they’re cooking evenly, and return the pan to the oven for 10 to 20 minutes more (i.e. 30 to 40 minutes total roasting time), until chicken and vegetables are cooked through. While it roasts, if you’d like to use the lightly pickled onion rings that we did on top, which added a nice tangy fresh zip to the dish, separate the rings and toss them in a small bowl with a squeeze of lemon juice and a pinch of salt. Set aside until needed. When chicken and vegetables are cooked, top with garnishes of your choice — we used dollops of yogurt, herbs and scattered the above onion rings all over. Serve right in the pan.

1/2 (16 oz) pkg. Jimmy Dean Sausage – (regular, hot or maple) (you can use more or less to taste)
1 c. Shredded Hash Browns – thawed
1 c. Shredded Cheese – Mexican Blend or your favorite cheese.
5 eggs
1/4 c. milk
1/2 t. salt
1/2 t. pepper
2 T. Parmesan – grated

Preheat oven to 375 degrees. Take the Crescent Rolls out of the fridge 15 minutes before making. Spray small sheet pan (10×15) with nonstick spray. (TIP: For a deeper style pizza, you can make in a 9×13 casserole dish!) Brown the sausage in a skillet and drain. Spread the rolls on prepared pan. You will have to press and work the dough a little to make sure it covers the pan; pinch the pieces together. Spoon sausage over the crust. Spread the potatoes over the meat. Spread the cheese over the potatoes. Combine eggs, milk, salt, pepper, parmesan together in a separate bowl. Spoon the egg mixture evenly over the cheese. Bake at 375 degrees for 25-30 minutes or until eggs are set. Oven times vary so check it about half way through.

Preheat oven to 400 degrees F. Soak about 12 toothpicks in water for at least 5 minutes. Rinse chicken drums and pat dry with paper towel. Rinse potatoes and prick with fork then dab them with a little olive oil. Get out a jelly roll pan with tall sides or a baking dish. Wrap one piece of bacon around chicken drumstick and secure it at the front and back with a toothpick for each. Place on baking pan and spread potatoes in area to fill space. Season chicken with any baking spices then top with fresh thyme springs. Bake in oven for 50 minutes or until chicken reaches internal temperature of 165 degrees F.

4 boneless skinless chicken breasts
2 ounces of cream cheese, softened
¼ cup shredded sharp cheddar cheese
¼ cup shredded mozzarella cheese
2 tablespoons finely chopped parsley
¼ teaspoon garlic powder
salt and pepper to taste
8 slices of bacon
1 pound of small new potatoes, halved (can also use regular sized potatoes cut into 1 inch pieces)
2 medium zucchini, quartered lengthwise and cut into ½ inch pieces
Optional garnish: chopped parsley

Preheat the oven to 400 degrees. Line a sheet pan with foil and coat with cooking spray.
Using a small knife, cut a slit lengthwise partway across each chicken breast to create a deep pocket. In a small bowl mix together the cream cheese, cheddar, mozzarella, parsley and garlic powder. Season with salt and pepper to taste. Spoon the cheese mixture evenly into the pocket of each chicken breast. Alternatively, you can put the filling into a plastic bag and snip the tip to create a makeshift pastry bag to squeeze the filling into the chicken. Use toothpicks to seal the pockets shut. Season the top of each chicken breast with salt and pepper then wrap 2 slices of bacon around each chicken breast. Place the chicken breasts on the sheet pan; scatter the potatoes around the chicken. Coat the potatoes in cooking spray and season with salt and pepper. Place in the oven and bake for 20 minutes. Remove the pan from the oven and add the zucchini, season the zucchini with salt and pepper to taste.
Return the pan to the oven and bake for an additional 20 minutes. Broil for an additional 3-5 minutes or until bacon is browned and crispy. Serve immediately, with chopped parsley as a garnish if desired.

1 1/2 tablespoons soy sauce
1 generous tablespoon chopped fresh cilantro
1 large shallot, peeled and minced
5 teaspoons avocado oil + more for baking dish
2 6-ounce sea bass fillets (each about 1 1/2″ thick)
1/2 teaspoon Sea Salt
1/4 teaspoon ground Black Pepper
About 15 Small Bella mushrooms, stemmed and sliced
1 pound Asparagus Spears, trimmed

Preheat oven to 500°F. Mix first 5 ingredients in small bowl. Set soy sauce mix aside. Brush 13 x 9″ porcelain or glass baking dish with a bit of oil. Arrange fish at one end prepared dish. Add asparagus spears next to fish and sliced mushrooms at opposite end. Sprinkle fish and vegetables with salt and pepper. Flip fish and sprinkle other side with salt and pepper. Drizzle Soy sauce mix over fish, asparagus and mushrooms. Place in preheat oven and bake until just opaque in center, about 12 minutes.

1 yellow onion, cut into thick slices
1 lb. sweet or hot Italian sausage

1 (15-ounce) can of peas, drained; or, a 16-ounce bag of frozen peas, thawed

Preheat oven to 350°. Toss potatoes and onion in a large bowl with some olive oil, salt and pepper. Place them on a sheet pan with sausage links. Roast for about an hour and a half. Stir once, about halfway through. When the potatoes are lightly browned, the onions are crisping at the edges and the sausage is golden, sprinkle peas around vegetables and meat and continue roasting until peas are heated through, about 15 minutes

Preheat oven to 475°. Rub the pork and zucchini with olive oil and season with salt, pepper and spice. Brush more olive oil on a rimmed baking sheet and place the pork on it, with garlic. Set zucchini around the pork. Roast for about 20 minutes, being careful not to overcook the pork. When an instant-read thermometer registers 145°, take the meat out and let it rest for 5 minutes before slicing. Spread garlic on fresh french bread and serve with meat and vegetables.

cook1 tablespoon neutral oil (vegetable, grapeseed, canola, or peanut)
1.5 tablespoons plus 1/4 cup low sodium tamari or soy sauce, divided
2 teaspoons cornstarch
1 teaspoon sesame oil
1 tablespoon honey
1 tablespoon rice vinegar
2 teaspoons sriracha or other hot sauce (reduce or omit for a milder flavor)
1 teaspoon minced fresh ginger
2 garlic cloves, minced
1 lb. boneless meat; choose from chicken breast, beef (steak or short ribs); pork (chop, tenderloin, lean rib meat); or, shrimp
1 red bell pepper, cut in 1/4″ wide strips (approx. 1 cup)
6 oz cremini mushrooms, cut in 1/4″ thick slices (approx. 2 cups sliced)
6 oz snow peas (approx. 2 cups), stems & strings removed
3-4 green onions, cut in 1/2″ pieces (approx. 3/4 cup)
2-3 carrots, cut diagonally in 1/8″ thick pieces (approx. 1 cup)
OPTIONAL TOPPINGS: nuts (cashews, almonds, or peanuts), chopped green onions

Brush oil evenly over surface of 13×18″ baking sheet (or, use 2 smaller baking sheets); set aside. Preheat oven to 425 degrees. In small bowl, use fork to stir together 1.5 tablespoons tamari or soy sauce with cornstarch until dissolved and uniformly mixed. Add remaining tamari/soy sauce, sesame oil, honey, rice vinegar, sriracha, ginger, and garlic; stir to combine. Set aside. If using chicken, beef, or pork, slice against the grain into 1/4″ thick bite-size pieces. If using shrimp, devein and remove shells and tails. Add meat or shrimp to medium bowl and add sauce mixture; stir to combine. Set aside to marinate while you cut the vegetables. NOTE: The meat should marinate at least 15 minutes (60 minutes is better if you have the time) and may be prepared and marinated up to 1 day ahead. Shrimp is more delicate and should not be marinated more than 60 minutes.. Scatter cut carrots, mushrooms, red pepper, snow peas, and onions in even layer on oiled sheet pan. NOTE: If crispier snow peas are desired, wait and add them to the pan half way through baking time. IF USING CHICKEN, BEEF, or PORK use tongs to distribute over top of veggies. Drizzle on any remaining sauce in the bowl. Bake uncovered for 30 minutes, stirring half way through. Remove from oven and toss again so that thickened sauce evenly coats the meat and veggies. IF USING SHRIMP, Remove the shrimp from the sauce marinade; put shrimp in separate bowl. Add veggies to prepared pan and drizzle with remaining sauce left in the bowl where the shrimp had marinated. Bake for 15 minutes, remove pan from oven, add shrimp and any additional liquid that has settled in the shrimp bowl; toss with veggies in pan; bake another 15 minutes. Remove from oven and toss again so that thickened sauce evenly coats the shrimp and veggies. SERVE the mixture over rice or noodles. For a low-carb option, make lettuce wraps by using this mixture for a filling. Top with nuts and chopped green onions, if desired.

1 pint cherry tomatoes
One onion, sliced in half, then into half moon rings, and then separate the half moons into strands
1/4 c. Olive oil
Kosher salt
Freshly ground black pepper
2 sirloin tip steaks, about 1″ thick, 2 1/4 lbs. total

1/2 stick butter
1 c. cream
1 T. Worcestershire sauce
1/2 c. crumbled blue cheese

Line a sheet pan with heavy duty aluminum foil. Preheat broiler. Use one bowl as your veggie tossing bowl. Drizzle onions with 1 T. olive oil, and sprinkle with salt and pepper. Scatter onions over sheet pan. Toss asparagus with 2 T. oil, sprinkle with salt and pepper, and lay stalks across pan, in a row one deep, so that they roast, rather than steam. By this time you’ll probably have oil and salt and pepper in the bottom of your bowl, so toss the tomatoes in that, adding more if you need to for everything to be glossy and well seasoned. Place pan in oven whose broiler has been pre-heated, about 4″ away from heating element. Broil veggies for 3 minutes. Remove tray from oven. Place a baking rack that has been sprayed with cooking spray over top of the veggies. Blot steaks with paper towels so that steaks will brown, and not steam, and season steaks generously with salt and pepper. Place steaks on rack and place in oven to broil. Broil for 3-4 minutes. Flip steaks, and broil other side. Remove from oven, and allow steaks to rest on a cutting board, while you make your sauce.

Put 1/2 stick of butter into skillet (I prefer cast iron) and melt butter over medium high heat. Take onion strands from sheet pan, and allow onions to caramelize in melted butter. When you have achieved lovely brown edges, add 1 c. cream and Worcestershire sauce to pan, and allow liquid to begin to bubble. Add crumbled blue cheese, and stir until cheese melts.

Now, your steak should be ready to slice, against the grain. Serve steak with sauce, and the asparagus, and tomatoes as your side dishes

Sheet Pan Supper: Turkey Roulade with Autumn Hash

It’s definitely possible to debone your own turkey breast, but it’s a pretty time-consuming effort so, if you can, have your butcher do the dirty work and buy a boneless breast with the skin still on.

3 cups diced white or wheat sandwich bread (3 to 5 slices)
4 cups 1/2-inch-cubed, peeled butternut squash
1 large leek (white and light green parts only), sliced into 1/2-inch-thick half-moons, washed well, and dried
2 medium-size Yukon gold potatoes, cut into 1/2-inch cubes
About 1/2 cup extra virgin olive oil
Kosher salt and freshly ground black pepper
4 scallions (whites and light green parts only), finely chopped
1/2 cup dried cranberries
1 cup diced unpeeled green apple (about 1/2 an apple)
1 teaspoon chopped fresh sage leaves
1 teaspoon chopped fresh thyme leaves
1 cup chicken broth
1/4 cup milk
1 large egg yolk
1 teaspoon garlic powder
1 boneless, skin-on turkey breast (about 5 pounds)

Preheat the oven to 400 degrees F with a rack in the center position. Line a sheet pan with aluminum foil. Arrange the cubed bread in an even layer on the pan, and toast in the oven until very brown and dry, about 8 minutes. Remove the bread from the oven and set aside to cool. (Leave the oven on.) Toss together the squash, leek, potatoes, 1/4 cup olive oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large bowl. Arrange the hash in a single layer on the sheet pan and set it aside. Transfer the bread cubes to the (unwashed) large bowl, add the scallions, cranberries, apple, sage, thyme, stock, milk, egg yolk, garlic powder, 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper, and stir to combine. Set the stuffing aside. Set the turkey breast skin side down on a cutting board and lay a big piece of plastic wrap on top of the meat. Use a heavy pan or flat-sided meat tenderizer to pound the turkey breast to an even thickness, about 1 inch. Remove the plastic and spread the stuffing evenly over the meat, leaving a 1/2-inch border on all sides. Starting with one of the long sides, roll up the turkey breast, fairly tightly, like a jelly roll. Use some butcher’s twine to tie up the roulade at 1-inch intervals. Place the turkey roulade, seam side down, on top of the hash on the sheet pan. Sprinkle the roulade with 1/4 teaspoon salt and 1/4 teaspoon pepper, and rub a bit of extra olive oil over the skin. Roast until an instant-read thermometer inserted into the thickest part of the roulade registers 165 degrees F, about 1 to 1 1/2 hours. Allow the roulade to rest for 15 minutes before cutting it into 1-inch-thick slices. Serve with the autumn hash.

Fear not, despite being baked, these are tender and flavourful meatballs — though check them a bit earlier if you make smaller ones than Gilbert calls for, as I learned. I highly recommend eating with the ricotta as she suggests.

For the tomatoes:turkeymeatball
4 cups (1 L) cherry tomatoes, halved
3 cloves garlic, skins on
1/4 cup (60 mL) extra-virgin olive oil
Pinch of fine sea salt
Pinch of dried oregano

For the meatballs:
1 small yellow onion, peeled
1 1/2 lb (750 g) ground turkey (dark meat is best)
1 cup (250 mL) grated Parmesan cheese
1/4 cup (60 mL) Italian-style breadcrumbs
1/2 tsp (2 mL) herbes de Provence (see note)
1 tsp (5 mL) kosher salt
1/2 tsp (2 mL) freshly ground black pepper
1/4 tsp (1 mL) ground mustard (such as Colman’s)
2 tbsp (30 mL) extra virgin olive oil, plus extra for serving
2 tbsp (30 mL) chopped fresh basil leaves, plus extra for serving
Ricotta cheese, for serving

Preheat the oven to 300 F (150C) with racks in the upper and lower thirds. Line two sheet pans with aluminum foil or parchment paper. On one of the pans, arrange the tomatoes in a single layer with the garlic cloves. Evenly drizzle everything with the olive oil and sprinkle with the sea salt and oregano. Toss to coat, then turn the tomatoes cut side up. Bake the tomatoes on the lower rack, rotating the pan halfway through, until they are puckered, crinkly and sweet, 30 minutes to 1 hour (the longer the tomatoes roast at a low temperature, the sweeter they’ll get). Meanwhile, make the meatballs: Use the large holes of a box grater to grate the onion into a large bowl; you will get some onion juice in the bowl as well — this is good. Add the turkey, Parmesan, breadcrumbs, herbes de Provence, kosher salt, pepper, mustard, olive oil and basil, and use your hands to gently mix everything together until combined. Do not over-squish the meat, as this will lead to tough, dense meatballs. Divide and shape the meat mixture into 24 golf ball-size balls (a cookie scoop is a great tool for this), and place them on the other sheet pan, leaving just a bit of space between the meatballs. Once the tomatoes have been cooking for at least 30 minutes (or a few minutes longer if you want them extra sweet), turn up the oven to 375 F (190 C). Slide the meatballs into the oven on the upper rack, above the pan of tomatoes. Bake the tomatoes and meatballs until the tomatoes are puckered and sizzling, about 15 minutes. Remove the tomatoes from the oven and set them aside. (Either discard the garlic cloves or peel them for serving with the tomatoes.) Flip the meatballs, rotate the pan and continue to bake on the upper rack until they are no longer raw inside (check one with a knife), an additional 20 to 25 minutes. Serve the meatballs warm, on a bed of the slow-roasted tomatoes, with dollops of ricotta on top. Drizzle with extra virgin olive oil and garnish with some extra basil, as much as you like.

Note: What is herbes de Provence? Glad you asked. It’s a mixture of dried herbs and spices traditionally found in the Provencal region of France, including thyme, savory, basil, fennel seed and lavender, among others. Small jars of the blend can usually be found in the spice aisle at the grocery store, though if necessary you an mix your own using equal parts dried savory, rosemary, thyme, basil, marjoram and fennel seed — or some other combination thereof — and if you can find culinary lavender, use that, too.
The Dish with Slight Variations (Turkey & Pork Meatballs)

2 tablespoons chopped fresh basil, plus extra for serving

Preheat oven to 300 degrees with racks in upper and lower third. Line two sheet pans with aluminum foil or parchment paper. On one of the pans, arrange the tomatoes in a single layer with the garlic cloves. Evenly drizzle everything with the olive oil and sprinkle with salt. Toss to coat. Bake on lower rack, rotating pan halfway through, until they are puckered crinkly and sweet, about 45 minutes. The longer they roast the better they are- you can take them out at 30 minutes, but try for an hour. Meanwhile, make the meatballs. Grate the onion with a box grater into a large bowl, to capture the onion juice as well. Add the ground meats, Parmesan, panko, spices, olive oil, mustard and basil. Use your hands to mix until well combined. Don’t over work the meat- this will give you dry, dense meatballs. Divide and shape the mixture into golf ball sized meatballs, and place on the other sheet pan, leaving just a bit of space between the meat balls. Once the tomatoes have cooked at least thirty minutes (I roasted mine at low heat closer to an hour), crank the oven up to 375. Put the meatballs on the upper oven rack. Bake both pans until the tomatoes are sizzling- about 15 minutes. Take the tomatoes out and set them aside. Flip the meatballs, rotate the pan and continue to bake until they are no longer raw inside, an additional 20-25 minutes. Serve the meatballs warm on a bed of the slow-roasted tomatoes, with dollops of ricotta on top. Garnish with some extra basil.

1 (2-lb.) flank steak
1/4 cup fresh lime juice
1/4 cup chopped fresh cilantro
1/2 teaspoon garlic powder
1 tablespoon plus 1 tsp. ground cumin, divided
1 tablespoon plus 1 tsp. ancho chile powder, divided
4 teaspoons kosher salt, divided
1/4 cup plus 2 Tbsp. olive oil
1/2 pound fresh tomatillos, husks removed
1 1/2 pounds sweet potatoes, peeled and cut into 3/4-inch pieces
1 large red onion, cut into 1/2-inch pieces
Flour tortillas, sour cream, fresh cilantro

Place flank steak in a large zip-top plastic freezer bag. Stir together lime juice, next 2 ingredients, 1 Tbsp. cumin, 1 Tbsp. ancho chile powder, and 2 tsp. kosher salt in a small bowl. Whisk in 1/4 cup olive oil, and pour over flank steak. Seal bag, and turn to coat. Chill 1 to 12 hours. Place oven rack about 6 inches from top of oven. Preheat oven to 450°. Rinse tomatillos, and cut into quarters. Stir together sweet potatoes, red onion, tomatillos, and remaining 1 tsp. cumin, 1 tsp. ancho chile powder, 2 tsp. salt, and 2 Tbsp. oil in a large bowl. Spread sweet potato mixture in an even layer in a heavy-duty aluminum foil-lined sheet pan. Bake at 450° for 20 minutes. Remove from oven, and move sweet potato mixture to outer edges of pan. Place flank steak in center of pan. Increase oven temperature to broil. Broil 6 minutes. Turn steak over, and broil 6 minutes more. (Stir vegetables if they begin to char.) Remove from oven, and let stand 5 minutes. Cut steak across the grain, and drizzle with pan drippings. Serve with sweet potato mixture, tortillas, sour cream, and fresh cilantro.

2 large handfuls broccoli florets
1 fresh pineapple, cored and cut into chunks
1 teaspoon sesame seeds (optional)
pinch coarse salt and fresh ground pepper to taste

In a bowl, whisk together oil, maple syrup, soy sauce, vinegar, ginger, five spice powder and sesame oil. Place the pork chops in a shallow baking dish or zip top bag and pour marinade over them making sure they are completely coated in the marinade. Marinade the pork chops in the refrigerator for 4 hours up to overnight, taking time to turn the pork chops in the marinade during that time. When it’s time to cook, preheat oven to 425 degrees. Line your sheet pan with aluminum foil and place pork chops onto sheet pan spaced out evenly. Reserve the marinade for the vegetables. In a bowl, add the broccoli florets and pineapple along with 1/4 cup pf the reserved marinade. Toss to coat. Place broccoli and pineapple on sheet pan and arrange evenly around pork chops. Bake in 425 degree oven for 15 to 20 minutes, until pork chops are cooked through (you can use an instant read meat thermometer to check internal temperature of 140 -145 degrees if you like). If you prefer, remove pork chops from pan and cook broccoli and pineapple for 5 more minutes (optional). Sprinkle sesame seeds over vegetables. Serve immediately

8 small uncooked breakfast link sausages (about 8 ounces)

Arrange a rack in the middle of the oven and heat to 425°F. Coat a rimmed baking sheet with cooking spray or a thin coating of oil. Halve the tomatoes lengthwise. Using a melon baller or teaspoon, scoop the seeds and core out of the tomatoes. Place the tomatoes in a medium bowl, add 1 tablespoon of oil and half of the thyme, season with salt and pepper, and toss to combine. Transfer to a rimmed baking sheet and arrange cut-side up (reserve the bowl). Roast for 15 minutes. Meanwhile, halve the mushrooms and place in the reserved bowl. When the tomatoes have roasted for 15 minutes, add the remaining 1 tablespoon oil and thyme to the mushrooms, season with salt and pepper, and toss to combine. (Do not do this ahead of time, as the salt will draw moisture out of the mushrooms.) Remove the baking sheet from the oven, add the sausage and mushrooms, cut-side down. Roast until the sausage is almost cooked through, about 12 minutes. Remove the baking sheet from the oven again and use a spatula to push the mushrooms, sausages, and tomatoes aside to create 4 empty spaces for the eggs. Crack the eggs into the spaces and season with salt and pepper. Roast about 5 minutes for runny yolks or 8 minutes for set yolks. Serve immediately with toast, if using.

Preheat your oven to 400 F degrees. Spray a baking sheet with cooking spray. Drizzle the olive oil over the pork chops and potatoes and toss well. In a small bowl mix together the ranch seasoning, smoked paprika, oregano and black pepper. Rub the seasoning over the pork chops and the potatoes. I didn’t find the need for additional salt, but feel free to season with salt to taste. Place the baking sheet in the oven and roast for about 35 to 40 minutes or until the pork chops are cooked through and the potatoes are fork tender. Garnish with chopped parsley then serve immediately.

1 tsp. Fennel Seeds, slightly crushed

Preheat oven to 450 degrees F. Line a large shallow baking pan with foil, if desired; set aside. In a small bowl combine basil, lemon peel, salt, and crushed red pepper. Pat chicken dry with paper towels. Rub herb mixture evenly over chicken pieces. Arrange chicken in prepared baking pan. Add Brussels sprouts to pan. Drizzle chicken and sprouts with 2 tablespoons of the oil. Roast, uncovered, for 20 minutes, stirring sprouts once. Add squash, apples, lemon, and fennel seeds to pan (or divide the mixture between two baking pans if crowded). Drizzle with remaining oil and toss to coat. Roast for 15 minutes more or until an instant-read thermometer registers 165 degrees F in the thickest part of the breast and at least 170 degrees F in the thighs or drumsticks and vegetables are tender. Garnish with additional basil and lemon peel, if desired.

Chermoula is a sauce or marinade often found in North African cooking, that typically contains olive oil, lemon juice, garlic and cilantro.

1 Fresno chile, seeded if desired, finely chopped
1 garlic clove, finely grated
¼ cup olive oil
1 tablespoon tomato paste
1 teaspoon paprika
½ teaspoon crushed red pepper flakes
½ teaspoon honey
¼ teaspoon ground allspice
1 tablespoon Sherry vinegar or red wine vinegar, plus more for drizzling (optional)
1½ pounds skin-on black cod or cod fillet
2 pints Sun Gold or other cherry tomatoes, divided
Kosher salt and freshly ground black pepper

Preheat oven to 300°. Mix cilantro stems, chile, garlic, oil, tomato paste, paprika, red pepper flakes, honey, allspice, and 1 Tbsp. vinegar in a small bowl. Set aside 3 Tbsp. chermoula for serving.
Place fish in a 3-qt. shallow baking dish. Cut 1 pint of tomatoes in half and scatter around fish along with remaining whole tomatoes. Spoon remaining chermoula over tomatoes and fish, spreading across the surface with the back of the spoon. Season with salt and pepper and roast until fish is cooked through and tomatoes are soft and some have burst, 20–30 minutes.
Transfer fish to a platter, breaking into large pieces. Remove and discard skin. Spoon tomatoes and roasting juices over and around fish. Top with reserved chermoula, then cilantro leaves; drizzle with more vinegar, if desired. Serve warm or at room temperature.

Brush sheet pan with olive oil. Place pork chops on pan and sprinkle with salt and pepper. Stir apples together with honey, cinnamon and nutmeg. Pour apples onto sheet pan with pork chops. Bake at 425 degrees for 25-30 minutes, until pork chops are cooked through and apples are tender.

Remove the lamb from the refrigerator and let it stand at room temperature for up to 1 1/2 hours. Preheat the oven to 500°F (260°C). [Editor’s Note: Trust us, you’re going to want to scrub that oven if you’ve got even the tiniest burnt-on spillover from last fall’s apple pie; otherwise your oven is going to smoke like crazy when it gets this hot.] In a small bowl, combine the garlic, salt, pepper, and oil and mix well. Using a small, sharp knife, cut 10 slits about 1 1/2 inches (4 centimeters) deep in the lamb. Push some of the garlic mixture into the slits and rub the rest all over the outside of the lamb, turning to coat all sides. Place a sheet of aluminum foil in a large roasting pan, shiny side down. Distribute the lemon slices evenly along the center of the foil. (It may be necessary to overlap some lemon slices.) Place the lamb on the lemon slices. Roast the lamb, uncovered, for 20 minutes. Reduce the oven temperature to 300°F (150°C) and continue roasting, still uncovered, until an instant-read thermometer inserted into the thickest part of the lamb, away from the bone, registers 130°F (54°C) for medium-rare, 30 to 50 minutes more. Transfer the lamb to a carving board and tent with aluminum foil. Let rest for 10 to 15 minutes. Carve the lamb against the grain into thin slices. Serve right away.

1 tablespoon soy sauce
1 tablespoon rice wine vinegar
1 large head Napa cabbage, leaves separated and thick white core removed
¼ cup hoisin sauce
2 tablespoons water

Preheat oven to 375. In a medium sized pan, heat canola and sesame oils. Add ginger, garlic, and mushrooms and sauté for about 5 minutes. In a large bowl, combine pork, cooked rice, carrot, scallions, cilantro, red pepper flakes, soy sauce and rice wine vinegar. Use your hands to mix until well integrated. Add ingredients from frying pan and mix well. Lay a cabbage leaf flat on a baking sheet. Scoop anywhere from 3 tablespoons to a ½ cup of the filling, depending on the size of the leaf, onto the stem end. Roll towards the leaf end, folding in the sides if you have some spare leaf (but not required). Place roll, seam side down, on baking sheet. Repeat with remaining leaves and filling. In a small bowl, mix together hoisin sauce and water. Brush the sauce to coat the tops and sides of all the rolls. Bake for 30 minutes. Check to make sure pork is done, and cook for additional 4-5 minutes more if needed.

1/4 cup finely chopped Tomato
3 teaspoon Canola Oil (or any cooking oil)
1/4 teaspoon Cumin Seeds / Jeera
2 Cardamon pods
1/4 teaspoon Turmeric Powder
1/2 teaspoon Chili Powder
1/2 teaspoon Kashmiri Chili Powder or red chili powder
1/2 teaspoon Cumin Powder
1/2 teaspoon Coriander Powder
1/4 teaspoon Garam masala
2 teaspoon Yogurt
2 cup + 4 teaspoon Water
Salt to taste
1 Puff Pastry Sheet (preferably Pepperidge farm), substitute with home made or store bought pie crust
1/4 tablespoon Butter (Optional)
2 tsp Dried fenugreek leaves / Kasuri Methi (Optional)

Preheat oven to 400 F. Line a baking tray with wax/parchment paper or foil. Brush it with butter/oil. Place 1 frozen puff pastry sheet on it and allow it to thaw. Wash cauliflower florets. In a sauce pan, add 2 cup of water, 1/2 tsp salt. Bring it to boil. Turn off and add the cauliflower florets. Let it stand for couple of minutes. This step will cleanse the cauliflower. In another sauce pan, boil Potatoes until it is 95% cooked (fork tender). I prefer to steam the potatoes. I cut them into equal size chunks and put it in my steamer for 5-6 minutes. In a wok/kadai, add oil. When it is hot add cumin seeds and allow it to sizzle. Add cardamon, finely chopped ginger. Add onion. Sauté until it turns translucent, for 2-3 minutes on medium flame.
Then add tomato, 1/2 tsp salt and sauté for another 3 minutes or until it becomes mushy. Add turmeric powder, chili powder, kashmiri chili powder, sauté. Add 2-4 tsp water to prevent it from sticking. Add cumin powder, coriander powder and sauté. Add 2 tsp yogurt, potato and cauliflower. Mix well. Adjust salt as per taste. Then add garam masala, mix and close the kadai with a lid and let it simmer for couple of minutes. This will allow the flavors to marry well. Do not forget to stir in between to avoid sticking to the pan. Open the lid, if there is any liquid left cook for couple of minutes until the water evaporates. Turn off and allow it to cool.
Place the baking tray in oven and bake the puff pastry sheet for 10 minutes. Remove it from the oven and reduce the temperature to 350 F. Spread the Aloo Gobhi Masala on the tart. Add few swirls of butter and bake for another 10-15 minutes. Serve it hot.

Preheat the oven to 400°F. Thinly slice the onion into half-moon shapes by peeling it, then slicing it once from root to tip. Lay the flat side of the onion down, then slice thinly. Place onions on the bottom of a small sheet pan that has a lip around the edge. Don’t let the oil and meat juices drip off in the oven, it could start a fire: use a rimmed baking sheet! I used a quarter sheet pan. Next, dice the potatoes into 6 pieces each, and add to the sheet pan. Toss the onions and potatoes with the canola oil and a good pinch of salt and pepper. Next, in a small bowl, combine the ground beef, Worcestershire, mustard powder, onion powder, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon ground pepper. Mix well with your hands, but don’t over mix. Form two oblong shaped patties with the meat.. Bake for 30 minutes, and serve hot.

4 Tablespoons chicken stock
3 Tablespoons salted butter, melted, divided
1/4 teaspoon ground savory
1 cup fresh cranberries
1 cup cooked, peeled chestnuts
1 1/2 cup snapped green beans

Preheat oven to 400F. Season turkey pieces all over with salt and pepper. Place on a large rimmed baking sheet and cover the pan with aluminum foil. It should be sealed. Roast turkey for 30 minutes. Remove foil (keep it for later) and roast for an additional 15 minutes. Meanwhile, prepare the remaining ingredients. Peel or scrub sweet potato and cut into 1 inch cubes. Cut onion into 8 sections. Cut celery into 1-inch sections. Combine all three vegetables in a bowl and toss with 2 tablespoons olive oil, 1/2 teaspoon salt and a few sprigs of fresh thyme. Remove turkey from the oven and increase the temperature to 425F. Spread the vegetables around the pan in a single layer. Return to the oven and roast for 20 minutes.
Place the bread cubes in a bowl and pour over the chicken stock and 2 Tablespoons melted butter. Toss bread cubes with ground savory and more fresh thyme. Combine cranberries, chestnuts and green beans in the vegetable bowl. Drizzle with 1 Tablespoon olive oil and season with salt and pepper. Remove pan from oven (yep, one more time!). Tuck the bread cubes around the turkey. Sprinkle the cranberries, chestnuts and green beans all over the sheet pan. Brush turkey with remaining melted butter. Roast everything for 10 minutes.
Remove pan from oven. Cover loosely with foil and rest for 10 minutes. Carve and serve.

2 tsp. roughly chopped fresh Tarragon
4 heaping T. chopped, pitted marinated Green Olives

Preheat oven to 400 with racks in upper and lower thirds. Cut 4 sheets of parchment paper, each 18 inches long and 15 inches wide. Fold each in half, short side to short side. Use scissors to cut each folded piece so that when you open the parchment it looks like a big, fat heart. Divide asparagus into 4 equal bunches and place one on each piece of parchment, on one side of the heart, just next to the center crease. Place one fish fillet on top of each bundle of asparagus. Drizzle orange juice over fish, and then sprinkle a tsp. of oil on each fillet. Season each with ¼ tsp. salt, ½ tsp. tarragon, and a heaping T. of the olives. Seal the parchment packages – fold the empty half of each heart shape over the filling and crimp the edges as you go until each package is completely closed up and airtight. Place two packets on each sheet pan, and bake, rotating the pans halfway through and switching them from lower to upper and lower to upper half way through, until the asparagus is crisp-tender and the cod is opaque (unfold and edge to peek in), 12-15 minutes. Slice each packet onto a place and carefully cut open a packet (watch out for steam).

1 (7- to 8-ounce) jar oil-packed sun-dried tomatoes, sliced if necessary (about 1 cup)

3 pounds bone-in, skin-on chicken thighs (6 to 8 thighs), patted dry

1 tablespoon brown sugar or pure maple syrup

1 (12- to 14-ounce) jar marinated artichokes, quartered if necessary (about 1½ cups)

1 (12- to 16-ounce) jar roasted red peppers, thinly sliced if necessary (1 to 1½ cups)

1 (6- to 8-ounce) container mixed pitted olives, drained (about 1½ cups)

 

Preheat the oven to 400°F. Dump the entire jar of sun-dried tomatoes (and oil) onto a sheet pan. Add the chicken and brown sugar and toss everything together to coat. Arrange the chicken skin side up. Add the artichokes (with their liquid), the roasted peppers (with their liquid), and the drained olives. Stir to combine with the other ingredients, making sure the chicken stays skin side up. Roast, carefully stirring the olive bar ingredients halfway through, until the chicken is cooked through, 35 to 40 minutes. Serve with the braising liquid poured over the top.

1 (12- to 18-ounce) package shelf-stable potato gnocchi

2 red, orange, or yellow bell peppers, chopped into 1-inch pieces (about the same size as the gnocchi)

1 yellow onion, coarsely chopped

3 tablespoons extra-virgin olive oil

Kosher salt and freshly ground black pepper

1 pound sweet or hot Italian sausage

1 tablespoon unsalted butter

For serving: grated Parmesan, small handful of torn basil leaves

 

Preheat the oven to 450°F. On a sheet pan, toss together the gnocchi, bell peppers, onion, olive oil, ½ teaspoon salt, and a few grinds of pepper. Shake into an even layer. Squeeze roughly ½-inch pieces of sausage out of the casings onto the sheet pan, all over the gnocchi and vegetables. Roast, stirring halfway through, until the peppers are softened and the sausage is browned and crisp, 30 to 35 minutes. Add the butter to the sheet pan and toss until the butter is melted, scraping up browned bits from the pan as you go. Serve topped with Parmesan and basil.

1 garlic clove

Kosher salt

1 egg plus 1 egg yolk

1 C. (8 fl. oz./250 ml) canola oil

Grated zest and juice of 1 Meyer lemon

For the shrimp

 

1 1/4 lb. (625 g) large shrimp, peeled and deveined, with tails intact

3 T. olive oil

3 large garlic cloves, minced

1 1/2 T. Dijon mustard

1 1/2 T. fresh lemon juice

Kosher salt and freshly ground pepper

For the asparagus fries:

 

1/2 C. (2 1/2 oz./75 g) all-purpose flour

2 eggs

1 C. (1 1/2 oz./45 g) panko

1/4 C. (1 oz./30 g) finely grated pecorino cheese

1 lb. (500 g) asparagus

2 T. chopped fresh flat-leaf parsley

 

To make the aioli, in a food processor, combine the garlic and a big pinch of salt and pulse several times until the garlic is finely chopped. Add the egg and egg yolk and pulse to combine. With the machine running, slowly add a few drops of the canola oil and then follow with a slow and steady stream of oil. Continue to process until fully combined and emulsified. Transfer the aioli to a bowl, stir in the lemon zest and juice, and season with salt. Set aside at room temperature. Preheat an oven to 425°F (220°C). Lightly spray a baking sheet with nonstick cooking spray, line with aluminum foil and spray again. To prepare the shrimp, in a large bowl, toss together the shrimp, olive oil, garlic, mustard and lemon juice, and season generously with salt and pepper. Set aside at room temperature. To prepare the asparagus fries, place the flour in a bowl. In another bowl, whisk together the eggs and 1 T. water. In a third bowl, stir together the panko and cheese, and season generously with salt and pepper. Cut or snap off the tough ends of the asparagus spears and discard. Dredge each asparagus spear in the flour, lightly coating on all sides, then dip into the egg mixture, letting the excess drip back into the bowl. Roll in the panko to coat completely. Place the asparagus in a single layer on one end of the prepared pan and season with salt. Place the shrimp on the other end of the pan. Roast until the shrimp are opaque throughout and the fries are golden, 8 to 10 minutes. Garnish the shrimp with the parsley and serve immediately with the fries and aioli. Serves 4.

6 salmon fillets (approx. 800 g total)

1 lb asparagus, trimmed

1 pinch each of salt and pepper

4 russet potatoes, thinly sliced

2 cloves of garlic, minced

1 lemon, thinly sliced

 

Preheat oven to 425°F. In large dish, combine capers, thyme, lemon zest and juice and 1⁄4 cup olive oil. Add salmon and coat well with caper mixture; set aside. In large bowl, toss asparagus with 1 T. olive oil; season with salt and pepper and set aside. In large bowl, toss potatoes with garlic and remaining 2 T. olive oil; season with salt and pepper. On baking sheet, arrange potatoes in a layer over two-thirds of the sheet. Place salmon on potatoes; top with caper mixture and lemon slices. Place asparagus on empty side of baking sheet and bake for 15 minutes. Test Kitchen Tip: Feel free to swap in your favorite sustainable fish for this recipe. You will have to adjust your cooking time depending on the thickness of your fillets.

1 beef Bottom Round Roast (about 3 pounds)

1 tablespoon minced garlic

1 teaspoon salt, divided

6 cups peeled diced beets (1-inch), about 1-1/2 pounds

5 cups diced sweet potatoes (1-inch), about 1-1/2 pounds

1 tablespoon vegetable oil

 

Preheat oven to 325°F. Line large shallow baking pan with parchment paper. Combine garlic, 1/2 teaspoon salt and 1/2 teaspoon pepper; press evenly onto all surfaces of beef Bottom Round Roast. Place roast in pan. Insert ovenproof meat thermometer so tip is centered in thickest part of beef, not in fat. Place beets and sweet potatoes in large bowl. Add oil, remaining 1/2 teaspoon salt and remaining 1/2 teaspoon pepper; toss to coat. Arrange vegetables around roast. Do not add water or cover. Roast in 325°F oven 1-1/4 to 1-3/4 hours for medium rare. Remove roast when meat thermometer registers 135°F for medium rare. Transfer roast to carving board; tent loosely with aluminum foil. Let stand 15 to 20 minutes. (Temperature will continue to rise about 10°F to reach 145°F for medium rare.) If vegetables are not tender, return to oven and roast until tender. Carve roast into thin slices; season as desired. Serve with roasted vegetables.

We wanted a fresh take on teriyaki that would yield crispy chicken in a sweet, sticky sauce. Sheet-pan roasting proved ideal: We could crisp the chicken before applying a glaze while simultaneously preparing a vegetable “stir-fry” in the same pan. We browned chicken thighs in the oven, slashing the skin and placing them on a wire rack to allow the rendered fat to drain away. We tossed sliced bell pepper and mushrooms with garlic and ginger and spread them alongside the chicken to roast. Snap peas went in 10 minutes later so they wouldn’t overcook. Briefly broiling everything crisped the thighs’ skin further. As for the teriyaki sauce, a few pantry items did the trick, and we thickened it in the microwave before brushing it on our chicken. Depending on your wire rack, you may need to place parchment paper underneath the vegetables to prevent them from falling through.

 

8 (5- to 7-ounce) bone-in chicken thighs, trimmed

2 T. vegetable oil, divided

1 red bell pepper, stemmed, seeded, and cut into ¼-inch-wide strips

8 ounces shiitake mushrooms, stemmed and sliced thin

3 garlic cloves, minced, divided

1 T. grated fresh ginger, divided

8 ounces snap peas, strings removed

5 T. mirin

5 T. soy sauce

¼ cup water

3 T. sugar

2 tsp. cornstarch

â…› tsp. red pepper flakes

1 T. toasted sesame oil

1 T. toasted sesame seeds

½ tsp. table salt

 

Adjust 1 oven rack to lower-middle position and second rack 8 inches from broiler element. Heat oven to 450 degrees. Set wire rack in rimmed baking sheet lined with aluminum foil. Make 3 diagonal slashes through skin of each thigh with sharp knife (do not cut into meat). Brush chicken with 1 T. vegetable oil. Lay chicken skin side up on half of prepared rack and roast for 20 minutes.  Toss bell pepper and mushrooms with remaining 1 T. vegetable oil, half of garlic, and 1½ tsp. ginger. Spread vegetables over empty side of rack. Rotate rack and continue to roast for 10 minutes. Sprinkle snap peas over vegetables and continue to roast until chicken registers 165 degrees and vegetables start to brown, about 10 minutes. Remove sheet from oven and heat broiler. Place sheet on upper rack and broil until chicken and vegetables are well browned and chicken registers 175 degrees, 3 to 5 minutes. Meanwhile, combine mirin, soy sauce, water, sugar, cornstarch, pepper flakes, remaining garlic, and remaining 1½ tsp. ginger in bowl and microwave, whisking occasionally, until thickened, 3 to 5 minutes. Remove sheet from oven, brush chicken with 3 T. sauce, and let rest for 5 minutes. Transfer vegetables to clean bowl, toss with sesame oil, sesame seeds, and salt. Serve vegetables and chicken with remaining sauce.
