Dried Black beans<br \/>\n1 onion, chopped<br \/>\n2 cloves garlic, chopped<br \/>\n1 bell pepper, chopped<br \/>\n7 cups water<br \/>\n1 tsp. olive oil<br \/>\nGround black pepper to taste<br \/>\n1\/8 tsp. ground cumin<\/p>\n<p>Rinse dried beans. Cover with water to 2 inches above beans; bring to a boil and cook 2 minutes. Remove from heat; cover and let stand 1 hour. Drain. In a Dutch oven saut\u00e9 onion, garlic and green pepper in oil over medium heat till tender. Add beans and water and season with salt, pepper and cumin to your desired taste. Mix well and simmer for 1.5-2 hours, or until beans are fully tender. Pour soup into blender and puree. Once soup is to your desired consistency return to Dutch Oven and return to medium-low heat. Pour a few drops of olive oil in bowl for added flavor and dish up soup. Top with tortilla strips, cilantro and\/or sour cream.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>1 lb.
