EVOO<\/p>\n<p>1 tsp. White Wine<\/p>\n<p>2 1\/2 C. Chicken Stock<\/p>\n<p>1 Bay Leaf<\/p>\n<p>Salt and Pepper to Taste<\/p>\n<p>&nbsp;<\/p>\n<p>Jus: Over medium heat, sweat carrot, celery, onions and garlic in olive oil. Add white wine and cook for 2 minutes. Add stock and bay leaf. Simmer for 20 minutes and strain. Prepare a grill or broiler for chicken. Combine marinade ingredients; add chicken and let stand in refrigerator 20 minutes. Drain and discard marinade.
