{"id":9222,"date":"2011-06-15T19:06:16","date_gmt":"2011-06-16T02:06:16","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=9222"},"modified":"2012-10-14T19:08:46","modified_gmt":"2012-10-15T02:08:46","slug":"braised-carrots-with-orange-and-capers","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=9222","title":{"rendered":"Braised Carrots with Orange and Capers"},"content":{"rendered":"<div>\n<p>2 T. olive oil<\/p>\n<\/div>\n<p>1 lb. carrots, peeled, end trimmed, and cut into 2-inch lengths<\/p>\n<p>Sea salt or kosher salt<\/p>\n<p>1 medium onion, halved and thinly sliced<\/p>\n<p>2\/3 C. thinly sliced celery<\/p>\n<p>1 1\/2 tsp. minced garlic<\/p>\n<p>1 can (14 1\/2 oz.) diced tomatoes<\/p>\n<p>1 C. low-sodium vegetable or chicken broth<\/p>\n<p>1\/2 orange (including peel), rinsed, ends trimmed, and chopped (discard seeds)<\/p>\n<p>1 tsp. minced fresh thyme leaves or 1\/2 tsp.\u00c2\u00a0 dried thyme<\/p>\n<p>2 T. drained capers<\/p>\n<p>2 T. chopped Italian parsley<\/p>\n<p>&nbsp;<\/p>\n<p>Pour 1 T. olive oil into a large frying pan over medium-high heat. When hot, add carrots, sprinkle lightly with salt, and turn to brown on all sides, about 4 minutes total. Remove from pan. Add onion, celery, and garlic to pan; stir often until vegetables are soft but not browned, about 2 minutes. Add tomatoes, chicken broth, orange, thyme, and the carrots to pan. Bring to a simmer, cover, and cook, stirring occasionally, until carrots are very tender when pierced, about 1 hour. Meanwhile, pour remaining T. olive oil into a small frying pan over medium-high heat.
