Milk<\/p>\n<p>1 C. grated Carrots<\/p>\n<p>1 C. grated Zucchini<\/p>\n<p>2 T. Canola Oil, for frying<\/p>\n<p>1 medium Onion, finely chopped<\/p>\n<p>1 clove Garlic, minced<\/p>\n<p>7 oz. Ground Chicken<\/p>\n<p>1 tsp. dried Oregano<\/p>\n<p>1 T. Catsup<\/p>\n<p>1 \u00bd tsp. Maple Syrup<\/p>\n<p>1 tsp. Soy Sauce<\/p>\n<p>\u00bd tsp. Worcestershire Sauce<\/p>\n<p>\u00bd tsp. Balsamic Vinegar<\/p>\n<p>\u00bd tsp. Sugar<\/p>\n<p>Salt &amp; Pepper, to taste<\/p>\n<p>&nbsp;<\/p>\n<p>\u00bc C. Flour<\/p>\n<p>1 Egg<\/p>\n<p>3-4 T. Canola Oil, for frying<\/p>\n<p>&nbsp;<\/p>\n<p>Put a heaping cup of bread crumbs into a bowl and add milk; let soak 20 minutes.\u00a0 Put remaining crumbs on a plate and set aside for coating later. Squeeze as much water from the carrots and zucchini as you can.\u00a0 Heat a little canola oil in frying pan and saut\u00e9 onion for 3 minutes, stirring occasionally.\u00a0 Add garlic and cook 30 seconds, then add carrot and zucchini, stirring for 5 minutes, over low heat.\u00a0 Remove to a plate and cool.\u00a0 Mix together the soaked bread, chicken, cooked vegetables and remaining croquette ingredients, seasoning to taste with salt and pepper.\u00a0 For coating, spread flour on a plate.\u00a0 Beat egg in small bowl.\u00a0 Using floured hands, form mixture into patties, coat in flour, dip in egg, then coat with remaining bread crumbs.\u00a0 Heat oil in frying pan and cook croquettes, turning occasionally, for 12 minutes, or until golden brown.\u00a0 Drain on paper towels.<\/p>\n<p>From Top 100 Finger Foods<\/p>\n<p>&nbsp;<\/p>\n<p>Yield:<\/p>\n<p>Calories:<\/p>\n<p>Fat:<\/p>\n<p>Fiber:<\/p>\n","protected":false},"excerpt":{"rendered":"<p>3 C. fresh Bread Crumbs, from white bread, crusts removed 4 \u00bd tsp.
