{"id":8749,"date":"2011-04-28T22:06:00","date_gmt":"2011-04-29T05:06:00","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=8749"},"modified":"2017-03-18T00:51:27","modified_gmt":"2017-03-18T07:51:27","slug":"apricot-pepper-jelly","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=8749","title":{"rendered":"Apricot Pepper Jelly"},"content":{"rendered":"<div>\n<p>&nbsp;<\/p>\n<\/div>\n<p>1 C. red or green bell peppers, cut into strips<\/p>\n<p>2 C. cider vinegar<\/p>\n<p>1\/3 C. jalape\u00c3\u00b1o peppers, remove stems &amp; seeds<\/p>\n<p>1 to 1 1\/4 C. dried apricot halves, finely slivered<\/p>\n<p>6 C. sugar<\/p>\n<p>3 oz. pouch liquid pectin<\/p>\n<p>5 drops food color, same color as pepper<\/p>\n<p>&nbsp;<\/p>\n<p>Combine pepper strips, vinegar and jalape\u00c3\u00b1o peppers in an electric blender.\u00c2\u00a0 Process stop-and-go fashion until somewhat ground, but small chunks remain.\u00c2\u00a0 Combine with apricot strips and sugar in saucepan; bring to a boil.\u00c2\u00a0 Boil 5 minutes.\u00c2\u00a0 Remove from heat; skim off any foam.\u00c2\u00a0 Cool 2 minutes, then mix pectin and food color.\u00c2\u00a0 Pour into sterilized jars and fasten lids.\u00c2\u00a0 Process in boiling water bath for 15 minutes if desired.\u00c2\u00a0 Cool.
