Spray a 9 \u00d7 13-inch baking pan with nonstick spray. Arrange the croissant pieces, ham, and cheese in the prepared baking pan. In a large bowl, mix the half-and-half, eggs, mustard, parsley, salt, pepper, and butter and pour over the ingredients in the pan. Give the mixture a slight toss and let it sit for 20 minutes. Cover with foil and bake for 30 minutes. Remove the foil and bake for another 10 to 15 minutes, or until the top is golden brown and the cheese is bubbling.
