Monterey jack cheese<br \/>\n2 C. hot cooked rice<\/p>\n<p>Heat oil over medium high heat. Add onion, jalape\u00f1o, &#038; garlic; saut\u00e9 2 minutes. Stir in squash and zucchini and saut\u00e9 2 minutes. Add corn, beans, tomatoes, and thyme. Cover, reduce heat, and simmer 10 minutes. Discard thyme; sprinkle with cheese.
