Whisk until emulsified, then stir in the garlic and bay leaf. In a large pan of boiling lightly salted water cook the shrimp for 1-2 minutes or until they turn pink and are cooked through. Drain them well and add them to the marinade. Let the mixture cool slightly, then stir in the onion and lemon slices. If desired cover and chill overnight. Stir in the minced dill or Italian parsley and transfer to a portable container.
