Add the oil and swirl to cover the bottom of the skillet. Pour in the eggs, cover, and cook for about 10 minutes. When the edges of the omelet are firm, the bottom firm, and the center solid, immediately spoon the watercress mixture onto the middle of the omelet. Using a spatula, fold half of the omelet up and over the filling, cover, and reduce heat. After about 2 minutes, turn the omelet to brown the other side.
