Fruit Flavored Vinegar (or white wine vinegar mixed with 1 T. Lemon Zest (or 1 T. minced fresh Lemon Verbena or Lemon Balm)<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Salt and Pepper<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">1 Red Onion, thinly sliced<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Salad Greens for lining platter<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Minced Chives or Hive Blossom Petals for Garnish<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">\u00c2\u00a0<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Preheat oven to 375.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Coat a large baking dish with olive oil and rub excess oil on beets, adding beets to dish.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Add enough water to just cover the bottom of the dish.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0\u00c2\u00a0 <\/span>Cover with foil and bake in preheated oven until beets are tender when pierced with a knife, about an hour for large beets.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Remove from oven, uncover and let cool.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>In large mixing bowl combine vinegar, honey mustard and shallots.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Slowly whisk in olive oil to make an emulsion.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Whisk in poppy seeds, chives, zest and salt and pepper to taste.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Add onion and toss well.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Let stand until beets are cool.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0\u00c2\u00a0\u00c2\u00a0 <\/span>Carefully peel cooled beets; cut into 1\/4\u00e2\u20ac\u009d thick slices.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Gently toss beets with onions.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Cover bowl with plastic wrap and chill at least 2 hours before serving.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>To serve, line a shallow bowl with salad greens. <span style=\"mso-spacerun: yes;\">\u00c2\u00a0<\/span>Spoon beet salad in center of prepared dish.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Sprinkle with minced chives or chive blossoms and serve.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>1-2 T.
