\u00be tsp Baking Soda<\/p>\n
\u00be tsp Baking Powder<\/p>\n
\u00bc tsp salt<\/p>\n
\u00bd tsp cinnamon<\/p>\n
\u00bd tsp cardamom<\/p>\n
1 tsp lemon zest<\/p>\n
\u00be cup Coconut Sugar<\/p>\n
3 T. lemon juice<\/p>\n
3 T. Blood Orange juice<\/p>\n
\u00be cup olive Oil<\/p>\n
3 eggs<\/p>\n
\u00bc cup applesauce<\/p>\n
2 tsp vanilla extract<\/p>\n
Icing<\/p>\n

Preheat oven to 350 degrees.\u00a0 Combine all ingredients together in a medium bowl and stir until well combined. Spray a 9 inch cake pan with oil spray and line with parchment paper. Pour batter into the prepared pan and bake for 40-45 minutes, until lightly browned on top. For icing you can buy a vanilla frosting from simple mills or miss jones (as pictured) or just do the citrus icing:\u00a0 1 cup powdered sugar + 3 T. lemon or blood orange juice<\/p>\n
