{"id":3643,"date":"2009-11-21T20:43:35","date_gmt":"2009-11-22T03:43:35","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=3643"},"modified":"2016-08-08T01:02:09","modified_gmt":"2016-08-08T08:02:09","slug":"miso-soup-2","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=3643","title":{"rendered":"Soba Noodle Miso Soup"},"content":{"rendered":"<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\">\n<p><span style=\"font-family: Calibri; font-size: small;\">2 oz dried shiitake mushrooms<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">1 bunch of scallions, roughly chopped into about 2&#8243; pieces<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">2&#8243; slice of peeled ginger<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">6 cups water<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">1\/2 package of tofu, cut into bite sized pieces<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">4 Tbsp miso paste (you can use any variety, I used a mellow white miso)<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">4 oz. soba noodles, cooked according to package and rinsed in cold water<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Soy sauce, to taste<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Sriracha sauce, to taste and optional<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Baby spinach, shredded carrots, sliced green onions and bit of sesame oil to garnish<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">\u00c2\u00a0<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">In a large pot, add in the water, ginger, scallions, and shiitake mushrooms. Bring to a simmer over medium heat and allow to cook until the mushrooms have softened and the water has been infused with the flavors, about 20 minutes. Strain the liquid, discarding the mushrooms, ginger and scallions. In a bowl, whisk the miso paste with some of the hot stock. Add to the pan with the rest of the stock. Season with a bit of soy sauce, and sriracha to taste.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Add in the cubed tofu, and cook 5 minutes more.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>To serve, place the cooked soba noodles in a bowl and top with the soup.
