Set out 3 plates.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>One will have a mixture of flour, salt and pepper.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>The second one will have the milk.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>The third will have a mixture of bread crumbs and paprika. Heat the olive oil in a large skillet on medium heat, do not allow it to smoke.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Dredge the cutlets first in the flour, then the milk, and then the panko.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0\u00c2\u00a0\u00c2\u00a0 <\/span>Coat well. Saut\u00c3\u00a9 the cutlets for about 4 &#8211; 5 minutes on each side, until golden.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0\u00c2\u00a0 <\/span>You may have to work in batches if your skillet is not big enough for two at a time &#8211; we had too.<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>Remove the cutlets from the skillet and cover with foil and keep warm in a preheated oven. While the cutlets are cooking, in<span style=\"mso-spacerun: yes;\">\u00c2\u00a0 <\/span>a small bowl mix the chives and salt into the sour cream.
